COURGETTE, LEMON & FETA RISOTTO

YOU’LL NEED...
• Calorie controlled cooking spray
• 4 large courgettes; 3 diced, the other grated
• 1 onion, finely diced
• 2 garlic cloves, crushed
• 1.5 litres vegetable stock, made with 1 stock cube
• 250g Arborio rice
• 2 spring onions, trimmed and finely sliced
• Grated zest and juice of 1 lemon
• 20g vegetarian Italian- style hard cheese, finely grated
• 20 basil leaves, shredded
• 40g light feta
• 100g watercress, to serve
