The two most common types of cinnamon are Ceylon and cassia
Cinnamon and honey-roasted aubergines and sweet potatoes
with crispy pitta, pistachios and pomegranate seeds
SERVES 2
• 2 sweet potatoes, sliced into 1cm discs
• 2 aubergines, sliced into 1cm discs
• 4 tbsp runny honey
• 4 tbsp olive oil
• 1 orange, zest and juice
• 1-2 tsp cinnamon
