2 sweet potatoes, sliced into 1cm discs
2 aubergines, sliced into 1cm discs
4 tbsp runny honey
4 tbsp olive oil
1 orange, zest and juice
1-2 tsp cinnamon
½ tsp cumin
½ tsp coriander
2 cloves garlic
1 red onion, roughly chopped
