DELICIOUS SMOKED SNOEK BOBOTIE
SERVES 6
KEEP ON TRACK per serving

500g pumpkin, peeled and cubed
4 tbsp olive oil
pinch of salt
2 onions, finely chopped
5cm piece of ginger, grated
1 clove garlic, finely chopped
1 tsp cumin seeds
1 tsp ground coriander
3 cardamom pods
1 tbsp curry powder
1 x 410g tin chopped, peeled tomatoes
400g smoked snoek, carefully deboned and flaked
6 bay leaves
3 eggs
1 cup milk
1 tsp turmeric powder
1. Preheat the oven to 180°C. Line 6 ovenproof ramekins with a capacity of 250ml with baking paper. Place the ramekins on a baking sheet.
