EFFORTLESS ENTERTAINING

PORK LARB WITH BROCCOLINI & NOODLES

SERVES 4 PREP & COOK 25 MINUTES

1 tbsp peanut oil
2 garlic cloves, crushed
600g minced pork
1/3 cup grated palm sugar
2 tbsp fish sauce
4 kaffir lime leaves, finely sliced
½ cup fried shallots
1/3 cup roasted unsalted peanuts
350g broccolini, trimmed, halved lengthways
250g egg noodles
1 tbsp lime juice
1 cup loosely packed coriander leaves
1 long red chilli, thinly sliced
2 tbsp coarsely chopped roasted unsalted peanuts

1 Heat oil in a wok over high heat, stir-frying garlic and pork for 5 minutes or until pork is browned.

2 Add sugar, fish sauce, lime leaves, shallots and peanuts to wok. Reduce heat to low, then stir-fry for 2 minutes or until mixture is slightly dry and sticky.

3 Boil, steam or microwave broccolini; drain well. Cook noodles following packet directions until tender.
