FOR THE CASHEW HERB PESTO

2 handfuls mixed herbs (like basil and dill) + extra
60ml pecorino, finely grated
80ml olive or avodaco oil + extra
60ml cashew nuts
1 garlic clove, crushed
lemon juice, to taste

FOR THE BRUSCHETTA

1 sourdough bread, sliced
500g heirloom cherry tomatoes
15ml balsamic vinegar
230g tub cream cheese
8 slices Parma ham, torn

1 For the pesto, blitz together all the ingredients until fine. Season.
