FRENCH COUNTRY FISH & MUSSEL STEW

SERVES 4 (AS A MAIN)

1 tsp olive oil
2 lean rashers bacon, trimmed of fat, chopped
1L (4 cups) water
Generous pinch of saffron
1 large carrot, finely chopped
1 stick celery, finely chopped
2 leeks, well washed, thinly sliced
350g tomatoes, chopped
420g can cannellini beans, rinsed and drained
300g skinless white fish fillets, cut into chunks
300g local black mussels, scrubbed and beards removed
2 Tbsp chopped flat-leaf parsley
