With a solid plan, you can own weeknight entertaining.

Start 2 nights before.

Two Nights Before

• Go grocery shopping.

• Set your table, and decide on serving platters and dishes. Set up an area for a cocktail bar with glasses and napkins.

• Read through all recipes again so you are familiar with them and cross-check to make sure you have all ingredients.

• Make yogurt spread for Shaved Summer Squash Salad. Refrigerate.

Night Before

• Make Honey-Cardamom Cream through step 3. Cover and refrigerate.

Morning Of

• For the Shrimp and Chorizo Paella, slice chorizo and peel and devein shrimp; wrap chorizo in parchment paper and place shrimp in bowl of cold water; store in refrigerator. Chop onion and mince garlic.
