o instead of a ‘stick to your ribs kind of meal’ (we’ll save that one for winter), I thought I would keep it a bit lighter with a Spanishinspired bruschetta. Beautiful peppers (or capsicums, depending on where you’re from) are abundant at this time of year. When roasted in their skins, their flesh transforms, turning sweet, succulent and smoky.
