SWEETCORN FRITTERS AND CHARRED LITTLE GEM LETTUCE WITH BASIL AIOLI

The key to good fritters is a quality non-stick pan, plus the bravery to let them do their thing when frying and not interfere too much, as this is what causes them to break up!

Serves 2 (8 fritters) Preparation time: 40 mins

Sweetcorn in water 340g tin, drained
Spring onions 6, finely sliced
Plain flour 3tbsp
Eggs 2
Sea salt flakes ½tsp plus extra to sprinkle
Rapeseed oil for frying 150ml
Little gem lettuce 1, cut into quarters through the core

For the basil Aioli:

Egg yolk 1
Dijon mustard 1½tsp
Garlic clove ½, peeled and minced
Sea salt flakes 1tsp
Lemon ½, juiced and zested
Rapeseed oil 300ml
Basil leaves handful, finely chopped
