SWEET POTATO RÖSTI

PREP + COOK TIME 25 MINUTES SERVES 4

500g orange sweet potato, peeled, grated coarsely
2 medium onions (300g), grated
2 egg whites
⅔ cup (50g) finely grated parmesan
2 tablespoons finely chopped fresh flat-leaf parsley
2 tablespoons finely chopped fresh dill
2 cloves garlic, crushed
1/3 cup (80ml) extra virgin olive oil mango chutney and lemon cheeks, to serve
