DEAN EDWARDS’ ONE POT GREEK RICE

Dean is a regular chef on ITV’s Lorraine, creating dishes that are achievable and taste fantastic. He has spent the past 11 years  inspiring home cooks, through his cookbooks, including the bestselling Cook Slow, and his YouTube channel, Dean Edwards: Proper Food.

Serves 4

Medium fresh tomatoes 3, halved
Red onion 1, peeled and chopped
Red peppers 2, deseeded and chopped
Garlic cloves 3, peeled
Fresh oregano 1tbsp
Tomato purée 1tbsp
Boiling vegetable stock 250ml
Long grain rice 250g
Black olives 80g, stoned and halved lengthways
Feta cheese 80g, crumbled
Cherry tomatoes 150g, halved
Fresh oregano and dill
Extra virgin olive oil, dash

Blend the medium tomatoes, onion, peppers, garlic, oregano and tomato purée in a blender until smooth then spoon into a pan, along with a good pinch
