Serve this salad warm, allowing the cheese to melt a little before eating

Salad

300g green beans, topped but not tailed
100g sugar snap peas
150g broad bean pods (yielding about 50g beans) 1 x 400g can black beans, drained, rinsed
½ bunch coriander, stems finely chopped, leaves left whole
½ bunch dill, fronds picked
1 handful mint leaves, roughly chopped
100g manchego cheese

Lime & jalapeño dressing

½ cup extra virgin olive oil
1 French shallot, finely diced
1 fresh
