SWEDISH MEATBALLS WITH BEETROOT AND APPLE SALAD

PREP 15 MINS COOK 20 MINS

SERVES 2 (WITH LEFTOVERS FOR 2; AS A MAIN)

MEATBALLS

500g lean pork mince
100g coarsely grated zucchini, squeezed of excess liquid
1 brown onion, grated
4 Tbsp chopped dill
2 cloves garlic, finely grated
Freshly ground black pepper
60g egg
1 Tbsp olive oil
1 tsp thyme leaves
2 tsp salt-reduced vegetable stock powder or gluten-free stock powder
300ml boiling water
2 Tbsp light sour cream

SALAD

1 large green apple, unpeeled, chopped
1 red onion, halved, thinly sliced
4 Tbsp chopped flat-leaf parsley
2 tsp drained capers
Juice of half a lemon
320g cooked beetroot, cut into thin wedges
