Cut the Cheese is designed as a guide for you, whether you're trying to go from being a vegetarian to a vegan, or you're suffering from an illness that is linked to dairy consumption, or even if you're a veteran vegan who needs supporting evidence to share with friends and family. I'll share my story of my struggle with cheese, and how I thought I'd never truly be able to give it up forever. We'll talk about why you might want to quit dairy, no matter how much you love it, because it's physically addictive, dirty, and leads to numerous illnesses. We'll delve into why we all have been led to believe that we need milk and calcium to keep our bones strong and how that's actually false information.
To wrap up, we'll talk about the plentiful sources of healthy plant-based calcium available in nature, how to go about actually quitting cheese, how to order vegan meals in restaurants and while traveling, and my very favorite vegan cheese on the market. In the last section I share my Dozen Delicious Vegan Cheese Recipes.
Cheese is one thing I could never give up.
I can't tell you how many people I hear from who say, I could never give up cheese.
When I hear that, I almost always think to myself a response, Oh yes, you could,
though I rarely say that exact thing. You know how I know that they could stop eating it if they wanted to? I used to say the same thing.
I loved cow's milk cheese. Gouda and other soft sweet cheeses were my favorites, but I also enjoyed a good chunk of gooey brie with crackers, tangy feta on salad, and I sprinkled parmesan on everything. I liked expensive cheeses and turned my nose up at American
and store bought blocks, but that's not to say that I didn't eat them. I did eat them. I'd eat any cheese, except perhaps really stinky blue cheese, which never appealed to me.
I seriously loved cheese. I would have been perfectly happy eating cheese, fruit, and vegetables for the rest of my life. Those were my candies.
So, that's how I know that you could give it up if you wanted to.
You can go from someone who seriously loves and appreciates cheese to someone who is literally repulsed by the smell of it within the span of one month. That's why it's hard for me to contain the little voice in my head that shouts at the person saying they could never give it up.
But I do contain it, because if I were just to say, Oh yes, you could give it up,
the person would feel like I thought I was better than them and would never listen to another thing I had to say.
What people are really saying is, Why would I ever want to give up cheese?
They're thinking about how much they love it, and probably considering the age-old adage, Life is too short to deprive yourself of something you love.
And that's a valid question, because most (I would estimate most to be 95%+) people don't have any idea why cheese may not be the best food for them. They probably think that it's high in fat, and perhaps for that reason they try to avoid it, or they try to find low-fat options.
But there's an even deeper and more relevant reason why you might want to think about quitting cheese. Perhaps the reality is that life is too short to eat something that deprives you of the joy of living and is known to shorten lives.
