Pure Banana Cupcakes
Serving Size: 12 persons
Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients Needed:
2 cups all purpose flour (260 g)
2 teaspoons baking soda (10 g)
1 teaspoon sea salt (5 g)
1 tablespoon ground cinnamon (15 g)
3 eggs (180 g)
½ cup unsalted butter, softened to room temperature (112½ g)
½ cup brown sugar (85 g)
¾ cup granulated sugar (150 g)
2 teaspoons vanilla extract (10 ml)
½ cup buttermilk (120 ml)
3 medium ripe bananas (354 g)
1 cup chocolate chips (160 g)
Peanut Butter Frosting:
¼ cup unsalted butter (56 g)
¾ cup creamy peanut butter (190 g)
1 teaspoon vanilla extract (5 ml)
¾ cup confectioners’ sugar (100½ g)
3 tablespoons heavy cream (45 g)
1 medium banana, sliced (118 g)
Method of Preparation
Preheat oven to 350 degrees F. Line 12 standard muffin cups with paper liners.
In a large bowl, combine flour, baking soda, salt and cinnamon.
Add eggs, butter, brown sugar, granulated sugar, vanilla and buttermilk.
Beat with electric mixer at medium speed for 2 minutes or until well blended.
Beat in bananas until well blended.
Fold in chocolate chips.
Spoon mixture into paper lined muffin cups.
