Introduction
I have a confession to make. I am usually firmly in team cake. There, I said it. I do prefer cake over pie, and there is a reason for that. I stink at making crusts. Sure, I do make a caramel apple pie for Thanksgiving but I usually end up buying the pie crust from the store. I am making myself practice, however, and I think I finally found the pie crust that I need. Hopefully, this crust recipe will work for you as well.
You have to understand that I do love the pie filling. I could eat most of the fillings included in this book straight from the bowl they are that good. I have tried to include family favorites plus some new ones that I have only tried a time or two. There are so many combinations that you might be shocked that you haven’t thought of one before reading it here. That is one of the great things about some pies- you can have them so many different ways it is like a whole new recipe every time.
Before we get started, I need to let you know about the layout of this book. Instead of listing the pie crust ingredients and directions for every single pie recipe here I am going to cover the crusts in the first chapter and then I will list which type of pie crust works best for each filling recipe. Of course, there will be several options to choose from including gluten free and low carb so you can have the right pie for your own needs.
Some pies only work with a certain type of crust. Others may work with a range of crusts. Chocolate pie, for instance, can work with the traditional crust but will work with a crumb crust as well. Don’t be afraid to experiment and always feel free to mix and match at will.
