Introduction
One of a traveler’s biggest nostalgic moments comes from remembering a past meal overseas and saying, Ah, that was so delicious – if only we could have some of that here.
When we think about it, every country has its starch vegetables, its meats – but what really sets each country's cuisine apart from any other are the sauces, the condiments, the spices and the dips that they use to accompany their main dishes.
Some of the ingredients are only found locally, in the country. But with the international movement of foodstuffs, including spices and herbs, you can come very close in your own kitchen to imitating some of these delicious flavors, many of which have become world-famous. Some require a little attention and time in the kitchen, but most are quick and easy. They are all delicious!
