    Introduction

    One of a traveler’s biggest nostalgic moments comes from remembering a past meal overseas and saying, Ah, that was so delicious – if only we could have some of that here.

    When we think about it, every country has its starch vegetables, its meats – but what really sets each country's cuisine apart from any other are the sauces, the condiments, the spices and the dips that they use to accompany their main dishes.
