Foreword
Cooking is love made visible.
For many years, I have struggled with my weight. As embarrassing as it may sound, I have tried so many diet fads and failed, that I have succumbed to depression, self-pity and the lack of self-confidence. And as I traveled through one weight loss solution after another, I have realized that none a single one will work on me unless I take charge of what I eat, how much I eat and how my food is prepared. Yes, you can shed pounds through quick diets, but once you stop and go back to your old routines, you gain the all the weight that you have initially lost, plus more!
After much internal debate and lectures from my health buff friends, I have concluded that my drive to shed the weight should be greater than those temporary weight loss regimens that we often see on the internet. I mean, let’s face it, we have different body structures and compositions; not to mention our varying metabolisms. And these should have already given us the clue that not all diets will work for us. What we need is a way to establish a routine that will not only help us achieve the weight that we want but also stay healthy in the process.
So I researched and talked to nutritionists and what I have learned shocked me. The solution to my weight problems has been here, right under my nose, all along! What I need is to come up with a structured diet and food prep practice that does not make me feel deprived and shackled. This is why I have made friends with my mom’s slow cooker and started to count my calories. And soon I started to notice that I am indeed losing weight and not gaining them back at all. I have become more adventurous in the kitchen, and I have also influenced my friends and family to cook more real and healthy food.
The recipes that I have discovered and some, developed, could really help anyone who is struggling with their quest to achieve healthier versions of themselves. And because I want to share my experiences and my journey, we have come up with this book! Inside you will find:
