1. Yellow Pulse Spinach

Ingredients

For 4-8 persons

200 grams spinach (leaves chopped), a pinch of asafoetida, 1/2 teaspoon red chilli powder, 1 cup green pulse, 1/2 teaspoon turmeric powder, 1 green chilli chopped, 1 piece ginger chopped, 1 onion chopped, 1/2 teaspoon hot spice powder, 21/2 cup water, 1 teaspoon cumin seeds, 2 tablespoon oil, 1.4 teaspoon salt.

Method

* Wash pulse with clean water twice. Add two cups of water and boil.

* After 5 minutes add salt, turmeric, red and green chilli and reduce heat.

* Heat oil in a pan. Saute asafoetida and cumin seeds. Add onion and ginger and fry till golden brown. Season the pulse. Bring it to a boil and add hot spice. Remove from heat. Cover and keep aside for 3-4 minutes.

* Serve hot with chapattis.

2. Red Gram Pulse

Ingredients

For 4-6 persons

250 grams red gram lentil, 1 teaspoon hot spice powder, 250 grams tomatoes chopped, 100 grams butter, 50 grams ginger chopped finely, 1/2 teaspoon cardamom powder, 1 large onion chopped, 1/2 cup tomato puree, 2 teaspoon sugar (optional), 4 flakes garlic chopped, 1 teaspoon green coriander chopped, 2 teaspoon coriander powder, 1/4 teaspoon turmeric powder, salt to taste.

Method

* Wash pulse. Add water and put it on the heat. Bring it to a boil and reduce the heat. Cook for 15-20 minutes or till it softens. Remove the pan from the heat.

* Heat butter in a pan. Fry onion till it turns golden brown. Add ginger and garlic. Fry for a minute while stirring all the time. Now add powdered coriander, turmeric, hot spice, chilli powder, and cardamom. Fry for half a minute while stirring all the time. Add tomatoes and tomato puree. Fry for two minutes while stirring all the time.

* Add sugar and salt. Cook till water evaporates. Stir all the time. Add cooked pulse. Mix well and cook for 5-7 minutes more. Remove from heat and serve hot.

3. Mixed Pulse Special

Ingredients

For 4-6 persons

50 grams split green pulse, 1 teaspoon ginger paste, and 50 grams red grams lentil, 1/2 teaspoon cumin seeds powder, 50 grams red lentil pulse, 1 teaspoon red chilli powder, 50 grams black gram, 1 cup tomato juice, 1/4 teaspoon hot spice powder, 50 gram pulse, 2 tablespoon oil, 1/2 teaspoon turmeric powder, 2 teaspoon onion paste, 2 thin and long pieces of green chillies, 1 teaspoon garlic paste, salt to taste.

Method

* Wash pulses with clean water. Put them in a large sauce pan with 2 glasses of water, salt, and turmeric. Cover and cook on low heat for 30-40 minutes. Heat oil in a pan. Add onion, ginger and garlic paste. Fry on low heat till golden brown.

* Add cumin seeds, red chilli and hot spice and fry for 20 seconds. Add tomato
