INTRODUCTION
To get more out of your meal especially salads you need the dressing that can match its flavor and make it very enjoyable. Salads are healthy foods that require healthy dressings to complement it such as home-made salad dressing. Most of what we find in the shops is bottled dressings loaded with unpleasant ingredients such as sodium, sugar and saturated fat. This often poses health challenges.
Homemade salad dressing gives you a better choice to enjoy a healthier meal. What is better than a home-made salad dressing you can control its nutritional contents and make wholesome. That is what you and your family will begin to enjoy.
Vinaigrette
Fresh Tarragon Vinaigrette
To get the best of this dressing use fresh tarragon herbs only to get the flavor and the vinegar to balsamic to keep it simple. You can adjust other ingredients to your taste.
Yields: about 3
Ingredients:
1/2 Tbsp finely chopped garlic
1 1/2 Tbsp Dijon mustard
3 tablespoon fresh tarragon leaves, finely minced
3 tablespoons balsamic vinegar
½ teaspoon kosher salt
3 tablespoons extra virgin olive oil
½ teaspoon black pepper, fresh ground
Salad greens (such as one small head red leaf lettuce)
Direction:
1. Place all the ingredients together in a pot or jar and whisk together. Add the fresh herbs last.
2. In a large bowl, throw in the dressing and the greens and serve.
Smoky Orange Vinaigrette
Yields: about 3/4 cup
Ingredients:
2 1/2 tablespoons orange marmalade
1 teaspoon honey
1/4 cup rice vinegar
1/4 cup extra-virgin olive oil
1 tablespoon water
1/2 small shallot, minced
1/2 teaspoon smoked paprika
1 tablespoon minced parsley Kosher
Freshly ground pepper
Salt to taste
Direction:
1. In a medium-size bowl, whisk the marmalade, vinegar, water, honey, shallot, and paprika.
2. Then gradually Whisk in the oil. Whisk in the parsley and add pepper and salt to taste
Basic Vinaigrette
This homemade salad dressing pairs well with beans salads, greens, grain salad and chopped salads. You can also use basic vinaigrette on grilled vegetables.
Yields: about 1 cup
Ingredients:
3/ 4 cup extra-virgin olive oil
4 teaspoon of white/ red wine vinegar
