    After returning to Lincolnshire Polly has concentrated on good wholesome straightforward cooking. Now Polly has been concentrated on her new ‘Mediterranean’ garden, up in the mountains; there are lots of new publications in the offing.

    Bistro

    TRADITIONALLY A BISTRO serves simple food, I now use this philosophy of a bistro to serve a menu of rustic, home dishes.

    The original bistros were hole-in-the-wall eateries, serving simple, relatively cheap food in an environment closer to a worker’s canteen or family dining room. Presumably, it had no resemblance to anything so, sometimes, aloof as a restaurant. So rough were they, in fact, that etymologists still aren’t sure whether the word bistro derives from the Russian word for quickly or dialect French for hooch.

    Whilst time and tourism have smoothed away the rougher edges, the best European bistros still preserve the original tradition of simplicity and speed, serving up lashings of the ultimate quick, quality food.

    THE WORD BISTRO IS believed to come from the Russian word meaning quick, so a meal ordered in a bistro is one that should be served swiftly.

    For me: Warm, familiar and no-fuss are all words that sum up classic bistro food. This is quality food without the pretention, when robust soups, wine-flavoured stews, creamy gratins and classic desserts are proof of the pudding. There's no fancy cutlery, no dress code and plenty of lively conversation shared with friends. This is the type of food that you'll also find on family tables throughout Europe.
