Setting The Stage
Dr. Mark Hyman has been studying nutrition for over 35 years. He is a practicing family physician and the director of the Cleveland Clinic for Functional Medicine. His contribution to the functional medicine field has been wide spread. In addition to winning several achievement awards, he has consulted and collaborated with individuals and corporations to make important changes in policy and education.
Recent decades have seen a significant rise in illness; diet being the major contributor. The number of people suffering from Celiac disease—an illness that causes food to leak into the gut—has risen 400% in the last 50 years. In modern times, we ask ourselves: what food should I eat? Our confusion is warranted. The whole diet debate has gotten confusing. Every year new research comes out saying that a once espoused principle has been discovered to be inaccurate. Today the number of diets are wide ranging. The purpose of this book is to break down the science and role of each food group to help you decide what to eat. Each chapter focuses on one food group and toward the end we discuss supplements.
PART 1 – The Food Confusion
The food industry knows your body better than you do. They recruit scientists to re-create human taste buds in lab settings. This allows them to engineer foods that are hyper-palatable and addictive.
Perceived Limitations
Many people blame the amount of time it takes to cook and the cost of whole foods for the reason they do not eat well, yet on average Americans spend 8 hours a day on screens. In regards to the cost, studies have shown that it doesn't cost much more to eat a whole foods diet. Think about a healthy diet as an insurance. It saves you from needing to take sick time from work to get over an illness or visit the doctors.
The Flaws in Nutritional Recommendations
Many of our nutritional recommendations are based on incomplete or biased data. The American Heart Association (AHA) receives most of its funding from the food and drug industries. Not too long ago, the AHA stated that coconut oil should be avoided due to its high saturated fat content. That study was funded by the canola oil industry. There have been a number of meta-analysis studies that have shown that dietary saturated fat consumption is not linked to heart disease. The AHA is incentivized to make those claims because it receives hundreds of thousands of dollars when they allow their heart health
