Curry Meatballs
This is a delicious curry dish that you will want to make whenever you need something slightly spicy. These meatballs are so soft, you will want to make over again.
Makes: 8 servings
Total Prep Time: 1 hour and 20 minutes
Ingredients for the meatballs:
Extra virgin olive oil, as needed
6 scallions, chopped into small pieces
2 jalapeno peppers, seeds removed
6 cloves of garlic, minced
1, 1 inch piece of ginger, peeled and chopped
1 Tbsp. of lemon juice
1 Tbsp. of garam masala
1 tsp. of powdered coriander
½ tsp. of ground cumin
½ tsp. of cayenne pepper
2 pounds of lean ground beef
1 egg, beaten
3 Tbsp. of plain yogurt
2 tsp. of salt
Ingredients for the sauce:
¼ cup of extra virgin olive oil
4 onions, chopped
10 cloves of garlic, crushed
1, 1 ½ inch piece of ginger, peeled and chopped
3 dried chiles de arbol
4 tsp. of powdered curry
4 tsp. of ground cumin
4 tsp. of powdered turmeric
3 Tbsp. of powdered coriander
1 tsp. of black peppercorns
1, 14.5 ounce can of tomatoes, crushed
1 bay leaf
1 Tbsp. of salt, extra for seasoning
1 Tbsp. of lemon juice
½ tsp. of cayenne pepper
Cilantro leaves, for garnish
Directions:
1. Preheat the oven to 400 degrees. Grease a baking dish with olive oil.
2. In a food processor, add in the chopped scallions, chopped jalapeno peppers, minced garlic, chopped ginger, fresh lemon juice, garam masala, 1 teaspoon of powdered coriander, ½ teaspoon of ground cumin and ½ teaspoon of cayenne pepper. Pulse on the highest setting until smooth in consistency.
3. Transfer the mixture into a bowl. Add in the ground beef, beaten egg, plain yogurt and 2 teaspoons of salt.
