This nutrient-packed, non-GMO, minimally processed meat alternative is the future of vegan and vegetarian cuisine. It also uses fewer resources and creates less waste than traditional beef, so the Earth wins, too. SALT is the first restaurant in the world to feature Meati on its menu, having built a relationship with the Meati manufacturers, who are also Boulder based. Particularly noteworthy is the Banh Meati sandwich, made with house-made kimchi, pickled carrots, daikon radish, plant-based siracha aïoli, cucumber, and shaved cabbage on a house-made ciabattini roll.
