Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. She learned many of her culinary abilities from her mother; most importantly, the need to cook with fresh, homegrown ingredients if at all possible, and how to create an amazing recipe that everyone wants. This gave her the perfect way to share her skill with the world; writing cookbooks to spread the message that fresh, healthy food really can, and does, taste delicious. Now that she is a mother, it is more important than ever to make sure that healthy food is available to the next generation. She hopes to become a household name in cookbooks for her delicious recipes, and healthy outlook.Martha is now living in California with her high school sweetheart, and now husband, John, as well as their infant daughter Isabel, and two dogs; Daisy and Sandy. She is a stay at home mom, who is very much looking forward to expanding their family in the next few years to give their daughter some siblings. She enjoys cooking with, and for, her family and friends, and is waiting impatiently for the day she can start cooking with her daughter.

Even before I was a single parent, I had a hard time finding recipes that worked with my schedule or gave me the information I needed. I need the prep time and the total cooking time, and I need something both easy and impressive!  If you’re the same, then this book is for you! 

My biggest problem when searching for healthy recipes for my daughter is finding recipes that are nut free. I’ve developed a food allergy and it can make things I ate and loved as a child tough. So, I have adopted the recipes in this book to help out with nut allergies.

The other part I hate when making new recipes is finding a recipe that looks amazing, only to find out that halfway through it’s made with nuts! Or, when what I thought was a quick recipe that would take 30 minutes is now going to take 2 hours! When you’re a busy parent and the people in your house are hungry, you have limited options. Let’s make your options healthy and tasty! 

So, dive into these recipes and find what works for you and your family. I’d love to hear your suggestions or changes, too!

Mexican Dip

I’ll be honest – I love this dip, and I have no idea why. My cousin makes it for Christmas every year and it’s one of my favorites! I do play with it here and there and add my own spices, but overall, it’s a family favorite!

Prep Time: 15 minutes (Total: 20 minutes) Servings: 8


16 -oz. can refried beans

1 package taco seasoning mix

2 cups Greek yogurt

2 avocados

2 teaspoons lemon juice

3 cloves garlic

2 cups shredded cheddar cheese

4 green onions

1/4 cup black olives

1 tomato, diced

Tortilla chips


Spread the beans for the first layer into a pan.

Mix the taco seasoning and Greek yogurt - spread for the second layer.

Blend avocados, lemon
