Like many animals, the pig was domesticated by man centuries ago in Asia Minor. As time passed, the pig had its successive migration and gradually spread throughout all of Asia, Africa, Europe, and finally America. Pork was so loved by people that it eventually became one of the most consumed meats in the world. For centuries, pork was almost the only meat consumed by the peasant communities of Europe and nothing from the body was wasted; the peasants cooked everything - from the ears to the trotters.

The meat of the domestic pig is pale and succulent and has been prized for its richness and flavor. Good quality pork should be pale pink, smooth and finely grained with white fat and thin skin. I think one of the best descriptions for the pig was made in the nineteenth century by the gastronomic writer Charles Monselet, who said that pork is, "nothing but an immense dish that walks while waiting to be serve". I am sure he must have been a Frenchman. "Bonne App?tit".

Originating from the family of swine, it is in the beginning of the third era that the pig appeared in Asia Minor and in the region of Turkestan. The pig then colonized all of Asia before taking up residence in Africa and Europe. Although the pig was affiliated with wild boar because of its resemblance for a long time, it is not descended from the wild boar, but from the wild pig. Indeed, according to the zoologists, there has been separation in prehistory between the ancestors of the wild boars and those of the domestic pigs.

The domestication of pigs in Europe began around 7,000 BC. The castration of males and the removal of the canines had already happened at this time. It is when it made contact with man that its morphology evolved considerably. It transformed from a wild animal to a domesticated animal that no longer required hunting to survive. Consequently, the wild animal became smaller, its teeth became shorter, its snout grew darker and its black skin became lighter over the centuries, and it gained its today’s pinkish tint.

The pig finds its place in the majority of cultures where various symbolisms are associated with it. In Greek mythology, it is associated with Demeter, goddess of fertility and agriculture. Moreover, it is even said that Zeus was fed by a sow, which generously offered him his milk. We also find the pig in many legends of the mythology of Ancient Greece. Among the Romans, it became the attribute of the God Esus, while the Egyptians lend him a double image associated with fertility, but also with maleficence.
