Each of the recipes found in this book has activities that your child can do on their own to help out with the preparation. The rule of thumb with each one is "the messier, the better." Cooking is a creative outlet and doesn't follow a neat and clean path, so getting cheese on your face or flour on your clothes is all part of the process. You may want to invest in a special apron and chef's hat for your child to make the experience even more fun.

Introduction

I made the mistake of letting my daughter pick her meals from a very early age. This misstep caused me to prepare two or even three different meals to satisfy the picky eater in front of me. Sometimes it would be I don't want nuffing! emphatically and then the pitter patter of little feet walking away from me. Sometimes she would eat a small bite of food, make a face, and then request cookies. My child is still a picky eater, but I have found that if I make food that looks fun but is very simple visually (no bits in it), she will eat more. I also cook with her, because that sense of ownership encourages more than a few bites.

Breakfast Recipes

Chocolate Chip Whole Wheat Pancakes

Pancakes are one food that kids have a lot of fun making, especially when they get messy. The batter pours on thick and gooey, and your child can add any ingredients they want. This recipe uses dark chocolate chips to give the pancakes a sweeter taste, but you can add fruit as well. You and your kids can even use the syrup or chocolate chips to make happy faces on the cakes. 

Preparation Time: 15 minutes

Servings: 8

Ingredients

2 cups white whole wheat flour

½ teaspoon salt

2 teaspoons brown sugar

2 large eggs

2 cups almond Milk

4 teaspoons baking powder

2 teaspoons vanilla extract

Unsweetened dark chocolate chips

Directions

Mix flour, salt, sugar, and baking powder in a bowl until it is well blended.

Mix in eggs, milk, and extract with a large wooden spoon until the entire mixture is moist and there are no dry patches.

I prefer to use cooking spray rather than oil, but you can use oil in a non-stick pan as well. Use a metal mold in the shape of a favorite cartoon
