Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. Hot Chocolate Cupcakes

To kick things off we have a decadent cupcake recipe that is nearly impossible to resist. These are the perfect cupcakes to make on a snow day.

Makes: 12 servings

Total Prep Time:30 minutes

Ingredients for the cupcakes:

1 ¼ sticks of butter

1 ¼ cups of white sugar

½ cup of marshmallows

1 ½ tsp. of baker’s style baking powder

4 eggs

1 cup of whole milk

1 tsp. of pure vanilla

3 cups of white flour

Ingredients for the frosting:

1 stick of butter

¼ cup of powdered cocoa

2 cups of powdered sugar

1 tsp. of pure vanilla

1 tsp. of powdered cinnamon

¼ tsp. of powdered nutmeg

¼ cup of chocolate chips, melted

Directions:

1. Heat up the oven to 350 degrees. Line a cupcake pan with paper cupcake liners. Set the pan aside.

2. In a saucepan set over medium to high heat, add in the marshmallows. Cook for 2 to 3 minutes or until melted. Remove and set aside.

3. In a bowl, add in the butter and white sugar. Beat with a mixer until fluffy in consistency. Add in the melted marshmallows. Stir well until incorporated. Add in the beaten eggs, pure vanilla and baker’s style baking powder. Stir well to mix.

4. Add in the whole milk and white flour. Stir well until smooth in consistency.

5. Pour the batter into the cupcake pan, filling each cup ¾ of the way full.

6. Place into the oven to bake for 18 to 20 minutes or until baked through. Remove and set aside to cool completely.

7. Prepare the frosting. In a bowl, add in the remaining butter and white sugar. Beat
