Ingredients
1 Red onion 10 Ripe Strawberries 3 tbsp white wine vinegar Black pepper corns 25 ml Salad Oil 4 Sour dough bread slices 2 Rashers of bacon 4 Mackerel filets
Preparation method
Peel and finely slice the onion into rings. Put them into a small bowl with the white-wine vinegar and set aside for 10 minutes. Add the strawberries and Oil and crush some black pepper on it. Keep the apple wood, on a tray, and place a wire mesh over it. Set the wood to fire, and place the mackerel and bacon over the wire mesh, skin side down. Cover the tray and mackerel with tin foil and let the mackerel/bacon cook, over the smoke, for a few minutes. Slice the sour dough bread, and top with the strawberry and red onion salad. Top the bread and salad with smoked mackerel and bacon broken into bits and enjoy every bite, slowly
