Chinese Egg Fried Rice The traditional chinese rice.

Preparation Time: 15 mins Cooking Time: 30 mins Makes 8 servings Show me for servings Ingredients 1 cup rice (chawal) 2 eggs 100 gms french beans 100 gms carrot 100 gms capsicum 4 sticks celery (ajmoda) 1 bunch spring onions 2 tbsp soy sauce 4 tsp refined oil salt to taste Method Boil the rice. Each grain of the cooked rice should be separate. Keep aside. Whisk together the eggs, 2 teaspoons of water , salt and pepper and shallow fry on a non-stick pan to make an omlette. Cut into bite-sized pieces and keep aside . Cut the vegetables into small pieces. Chop the leaves of the spring onions. Heat the oil thoroughly in a vessel and add the vegetables. Cook on a high flame for 3 to 4 minutes. Add the rice, omlette, soya sauce and salt. Mix very well and cook for 2 minutes . Serve hot with chillies in vinegar and chilli sauce.
