Discrepancies in ESHA grams of carbohydrate: Overall there was only a 17 gram difference between estimated carbohydrates, and the carbohydrates measured in ESHA. One major difference was the carrots. One cup of baby carrots was equal to 12 grams of carbohydrate on ESHA, and only equal to 5 grams according the diabetic exchanges. The banana was 18.5 grams of carbohydrate instead of 15. Most of the foods however were plus or minus 3 grams of carbohydrate, but these small differences added up to 17 grams throughout the day. Following the diabetic diet: I chose to follow the third diet, an 1800 calorie diet. This was much harder than I expected. The hardest part was eating at the correct times. I would plan to eat dinner at 5:00, but with homework, and food preparation it took longer to get dinner ready. Some of my times conflicted with class and work schedules so I had to eat a large quantity of food in a short amount of time. Following this diet took a lot of planning. It took me much longer to get out the door in the morning when I had to worry about how many exchanges I was bringing with me. Overall following this diabetic diet made eating less of a spontaneous and enjoyable experience, and more of a stressful one. I did find that I was able to eat healthier because I was more aware of what I ate, I snacked less, and I consumed more fruits and vegetables that I had planned into the diet. This experience has really helped me to have empathy for diabetics. I also found myself going back and making changes to my original diet plan because some exchanges were impractical for one meal. I feel that I will be able to better help diabetic patients after completing this assignment.
