1. Brush an o.en tra$ with melted %utter or oil. Dissol.e $east in warm water. 0ea.e+ co.ered with plastic wrap+ for 1 minutes or until %u%%les appear on surface. 2eat milk+ %utter+ sugar and salt in a pan until 3ust warmed. Sift 2 cups of the flour into a large %owl. Add the $east and milk mi,tures and %eaten egg. Mi, thoroughl$ until a smooth %atter is formed. Add enough of the remaining flour to make a soft dough. 4urn out onto a lightl$ floured surface. 5nead for 1( minutes or until the dough is smooth and elastic. !lace dough in a large+ lightl$ oiled %owl and %rush surface of dough with oil. 6o.er with plastic wrap7 lea.e in warm place for 1 hour or until well risen. 2. 4o make Filling8 6ream %utter and caster sugar7 com%ine with almonds+ mi,ed fruit and cherries. 3. !unch dough down+ and then knead for 1 minute. 9oll dough to a 21 cm : ;1 cm rectangle. Spread filling o.er dough to within 2 cm pf %order. 9oll up dough7 form into a ring with seam underneath roll. Seal ends together with a little com%ined egg $olk and water. !lace on the prepared o.en tra$. 4. Snip with scissors from outside edge e.er$ ; cm. 4urn cut pieces on side and flatten slightl$. 6o.er with plastic wrap7 lea.e in a warm place for ;1
