Fluffy Vanilla Cupcakes With Buttercream Frosting Recipe

Ingredients
cupcakes 1/2 cup butter, at room temperature 2/3 cup sugar 3 eggs 1 tsp vanilla extract Zest of one lemon 1 1/2 cup flour 1 1/2 tsp baking powder 1/4 tsp salt 1/4 cup milk frosting 1 cup butter 2 cups confectioners sugar 2 tsp Vanilla 1/4 cup heavy cream

Preheat oven to 350 degrees F, and line a muffin tin with 12 muffin cups. In a medium bowl, sift together the flour, baking powder and salt. In the bowl of a mixer, cream the butter until light, slowly add the sugar and beat until fluffy. Add the eggs, one at a time and then the vanilla and lemon zest. Beat until combined.

On low speed, alternate adding the flour mixture and the milk. Mix until just combined. Divide the batter between the prepared liners and for 16-20 minutes. Remove to cool on a wire rack before frosting.

For the frosting: In the the bowl of an electric mixer Cream the butter until fluffy. On medium speed using the whisk attachment, add the sugar and cream until all is incorporated. Add the vanilla and turn the mixer to high. whip for 2-3 minutes until light and fluffy.

Use a piping bag to frost the cooled cupcakes.
