Sponge Cake

. Simple Sponge Cake:


Ingredients: 2 eggs; 100 gms amul butter; 1 cup flour; 1 tsp baking powder; cup castor
sugar; A few drops of vanilla essence
Method:
1. Sift the dry ingredients - flour and baking powder.
2. Keep the butter out of the fridge for at least 30 minutes or till it starts melting at room
temperature. Now mix it with the sugar.
3. Gently beat the eggs and add the sugar-butter mixer.
4. Add the egg mix to the dry ingredients and fold in along with the vanilla mixture. Now,
pour the cake batter into a greased pan.
5. Preheat the oven to 180 degree centigrade and put the cake to bake for 30 to 35 minutes, or
till a toothpick comes out clean.
6. After your cake is baked, allow it to cool. Once cooled, slice, serve and enjoy
Sooji or Rava cake:
Ingredients: 1 cup Sooji; 1 cup plain yoghurt; 1 cup milk; 1 cup castor sugar; 2 tbsp Ghee; 1
tsp baking powder; 1 tsp cinnamon powder; A handful of unsalted cashew nuts, Pistachio,
Almond (Unsalted)

Method:
1. Sift the dry ingredients sooji, cinnamon powder and baking powder.
2. Make sure the ghee is melted and at room temperature. Mix the sugar with the ghee.
3. Add the sugar-ghee mixture to the yoghurt by gently beating it in.
4. Meanwhile, mix the milk with sooji and fold in the yoghurt with sugar ghee mixture.
5. Add the cinnamon powder and cover the cake batter. Allow it to rest for two hours.
6. After two hours, sprinkle the unsalted dry fruits and preheat an oven at 180 degree
centigrade.
7. Pour the cake batter into a greased pan and let it bake. After 10 or 15 minutes, check if the
edges of the cake have turned brown. The toothpick trick doesnt work here because theres
no flour. Edges turning brown is an indication that the cake is done.
