INGREDIENTS
1 T. sugar
1 T. yeast
1/3 c. warm water
1 1/2 tablespoons finely chopped dill
1/8 cup caraway seeds
2 T. butter
2 T. sugar
1 egg
1 t. salt
c. warm milk
4 c. flour
DIRECTIONS
Combine and proof 5 min:
1/3 c. warm water
1 T. sugar
1 T. yeast
Combine in Kitchen Aid mixer with dough hook:
2 T. butter
2 T. sugar
1 egg
1 t. salt
c. warm milk
1 tablespoons finely chopped dill
half of your caraway seeds
Measure 3-4 c. flour
Add 3 c. flour and mix to soft dough
Add more flour c. at a time if needed. Dough should cling to hook when a
soft dough forms. Bowl should be clean on inside. 2 minutes on speed 2 to
knead
Can also be combined in food processor with plastic blade, knead 1 min.
Proof in proof box, 30 min. or till double in bulk. Do not cover.
Shape into 12 balls. Place in sprayed pan.

BAKED TORTELLINI WITH PESTO CHEESE SAUCE

INGREDIENTS
Pasta
2 c. flour
2 eggs
1 t. water
1 t. oil
1 t. salt
Sauce
2 Tbsp. butter or margarine
1/6 cup all-purpose flour
2/3 cup milk
2/3 cup chicken broth
1/6 cup prepared pesto sauce
1/6 tsp. salt
1/6 tsp. pepper
2 Tbsp. chopped sun-dried tomatoes in oil, drained
1 1/3 cups (5.33 oz) Shredded Whole Milk Mozzarella Cheese
1/3 cup (1.33 oz.) Shredded Parmesan Cheese
DIRECTIONS
2 c. flour

/ Combine all in Kitchen Aid mixer with dough hook or food processor with
plastic blade. Dough should be stiff and cohesive. May add more flour, 1 T. at
a time or more water 1 t. at a time or more water 1 t. at a time to correct
consistency.
/ Wrap in plastic wrap and let rest hr
/ Roll out for desired product using Kitchen Aid pasta maker attachment or
hand crank pasta maker

thickened, stirring constantly. Stir in pesto, salt and pepper. Heat through; set
aside.
Layer half of the tortellini in 1-1/2-quart baking dish; sprinkle with half
of the tomatoes. Pour half of sauce over tortellini; sprinkle with half of the
Mozzarella cheese. Top with remaining tortellini, tomatoes, sauce and
Mozzarella cheese. Bake in preheated 350F oven 25 minutes until bubbly.
Sprinkle with Parmesan cheese.
