Laboratory Report: Making Rock Candy

Introduction:

Sugar has four properties which are;


sweetness, solubility, caramelization and
crystallization. Many atoms are arranged in
the ring structure. The difference ring
structure forms the difference properties of
sugar. Furthermore, crystallization is the
additional crystal form on top of another. It
begins with sugar particles are added to
boiling water to create supersaturated solution. This process causes by
the sugar solution boils and then water will evaporate. After that, the
crystal left behind the container and forms a beautiful sugar crystal. In
this experiment, we did some crystallization and we hope to find out
how does sugar be the crystallization.

Purpose:
The purpose of this experiment is to find out how
crystallization of sugar is formed.

Materials:

1. 1 cup of water
2. 3 cup of sugar
3. strings
4. pot

5. glass
6. chopsticks
7. food coloring
8. food flavour

Procedure:

1. Prepare pot, 1 cup of water, 2 cups of sugar, strings, glass,


chopsticks and food coloring or flavour
2. Boil 1 cup of water in the pot and pour into beaker
3. Add 3 cups of sugar into beaker
4. Stir it until the sugar dissolved
5. Put string into water
6. Roll string in extra sugar
7. Prepare food coloring or flavour into a glass
8. Pour mixture into each glass
9. Put string around chopsticks and dip it. Make sure that it doesnt
touch any side of the glass
10. Let sugar grow on the string for a week
11. Break sugar to get the rock candy out

Analyzing Results

The properties of sugar differ among the arrangement of ring


structure. There are four differences properties including sweetness,
caramelization, solubilization, and crystallization. Sweetness depends on
the the sugars molecules. It has many factors such as concentration,
consistency, temperature, and pH level. Caramelization occurs when we
heat the sugar and then the water molecules will leave. It forms new
molecules which is called carbon as well as our sugar will have brown
color. Solubility is the sugar that can easily to be soluble in water.
Because it consists of many hydroxyl groups(OH). If the sugar(solute) is
more than normally hold on that temperature is called supersaturated.
Crystallization is formed after we boiled the sugar with water and
then the water will evaporate and the crystal with left behind.
Moreover,
We looked for one of the property of sugar which is
crystallization. We tried to find out how crystallization formed after
making a mixture of rock candy by boiling sugar and water. We had to
wait for a week to let it evaporate and left the crystal-liked sugar, rock
candy. Additionally,
Our group has a different results product and color
since we have many food colorings so we make four different color
which are pink by Nice, purple by Achi, blue by Jidd and green by June.
Achis has the least sugar stuck in. Nices and Jidds have same amount

of sugar stuck in but Nice has more a little bit of sugar. Junes rock
candy has the most sugar stuck in the string. Its formed perfectly,
sparkle and has a shape like a rock candy in the stores. On the other
hand,
June is the one who most successful in this lab not only our
group but also all of the class. At first when she did the lab, the string
that she made was too short. So she did the new one and made extra
sugar stuck in the string enough to make sugar grow successfully and
this is the most important part of how to grow a rock candy. In the
same way, We found that the most important step in this lab was to
make the extra sugar stuck in the string so much enough the let it
grow by rolling it. Next time, when we did this lab again, we will do all
of the step carefully especially when we roll the string on extra sugar
so it will grow much more that this time and more successful.

Conclusion:

In summary, We did rock candies in this experiment to figure out


the growing of crystallization in sugar which is one of the four
properties of sugar. We did a lot of things in this lab. We had to boil

water and mix it with sugar and that mixture is the one that we use
for making rock candy. Next, we tied the string with chopsticks and
stuck it with extra sugar. This is the most important step in making a
rock candy since the extra sugar that stuck on the string has a job to
make it grow. Since our group have many food coloring so we make
four different color. Then, we pour mixture to our own glass and put
the string in. At first, we cut the string too short so we had to make a
new one. After we put the string into each glass, we have to wait for a
week to let a rock candy grow. We also have to discard some of extra
sugar that float on the glass. Finally, we got our own rock candy. There
are four color rock candies in our group, pink, purple, blue and green. The
purple one has the least sugar stuck in. This might happen because
when we roll an extra sugar, it might not stuck enough to let a rock
candy grow. And the green one is the most successful in the class. It
grew successfully that the shape is like the ones in stores. We found
that when an extra sugar is wet because many people use it, the string
might get an extra sugar less since it too wet to stuck in. However, if
we always change an extra sugar into a dry new one to roll, it might
stuck in the string as we expected.
