Introduction

SweetRetreat:ATherapeuticCulinaryArtsProgram

Therapeuticcookingandbakingisaformoftherapythatusesthevarioustypesoffoods
tobeprepared,cooked/baked,andplatedorservedwhichcouldimproveonesmentaland
physicalwellbeing.Thisformoftherapynotonlyhelpstheclient'smoodandskilllevel,butwill
alsoeducatethemonlearningnecessarylifeskillslikebeingabletobecomemoresocial,
selfsufficient,independent,howtofollowarecipe,learnaboutdietingandnutrition,and
learninghowtoplanamealandparty.
Population

Thetargetpopulationforthisprogramareallofthepatientsatthechildrenshospital.
Thisincludesoutpatientsofthehospitalaswell.Becauseofthenatureofourhospitalwehave
alltypesofdifferentpatientsandtheclientsthatwecaterthathaveavarietyofdifferentdeficits.
Thosetypesofdisabilitiesinclude:
ProgramPurpose

Thepurposeoftheprogramistousecookingandbakingtherapytoprovidechildrenof
allagessocial,physical,cognitive,andemotionalbenefits.Thetechniquestaughtinevery
sessionwillaidinfinemotorskills,socialization,depression,sensorymotor,concentrationskills,
etc.Theprogramis,mostimportantly,toboosttheemotionalwellbeingofthechildrenwhoare
patientsatourhospital.Giventheywillbethereforanextendedperiodoftime,wewouldliketo
providethemwithafunandrewardingtherapeuticactivitywhichnotonlyaidstotheirdeficits,
butisalsoeducationalinanontraditionalandinvitingsetting.

Number,LengthandFrequencyofSessions
Thisprogramisdesignedwith9sessions,whichwillbeheldonceaweek.Each
sessionwouldbeaboutonetotwoandahalfhours,dependingontheweekandrecipethat
isused.Thisisademandingamountoftimeforsomepatients,butwillbemodifiedforeach

clientasnecessaryforthemtoparticipatecomfortably.Havingweeklysessionsgives
clientsenoughtimetorecoverfromthelonghourstheymayexperienceineachsession
andgivesthemenoughtimetothinkabout,learn,andpossiblyapply,practice,and
researchthetopictheylearnedthatweek.Makingthisaweeklymeetingisalsocost
effectiveforthedepartmentandtheclient.Givensuppliesandliabilityareexpensivealong
withmaintainingthefacility,providingingredientsandnecessaryequipmentand
instruments.
FacilitiesandEquipment
Thefacilitymustprovideakitchenwithenoughcounterspaceforparticipantsand
instructorswhichissetupinawaythatparticipantsarefacingtheinstructor.Theremust
beadishwasherandsinkwithagarbagedisposaltoridoffood,alargeindustrial
refrigeratorandfreezeralongwithalargeenoughpantryandorcabinetsthatwillhouse
foodsandequipment.ThisProgramtakeslessthan10studentssotheremustbeatleast10
blenders,mixers,spatulas,forks,knives(butter,steak,chef),spoons,largewoodenspoons,
caketesters,bakingsheets,cakepans,bundtpans,aprons,cuttingboards,thermometers,
pots(smallandlarge),skillets(smallandlarge),strainers,tongs,ovenmitts,andalarge
ventthatwillventouttheodors,smoke,orvaporinthekitchen.Alongwiththethefridges
andfreezersbeingfilledwiththenecessaryingredientsneededforallclientsparticipating,
thekitchenmusthouseatleast3convectionalovensandatleast10stovetopswithtwo
differentsizedhotplateswhichwouldservetheclientsneedsduringsaidactivity.Awhite
orchalkboardwillbenecessaryinorderforinstructions,recipes,orothernotestobe
displayedfortheentireclass.Tallchairsorstoolswillberequiredincaseclientsare

uncomfortablestandingforaprolongedperiodoftime.Plasticwrap,foil,disposableplates
andcups,papertowels,anddisposablefoodcontainerswillbenecessaryfortheclientsto
usetoeitherenjoythereinclassortakehometheirtreats.Nametagswillalsobenecessary
thatwayallclientswillknoweachothersnameandcouldcreateamorepersonaland
socialsetting.Nonlatexgloves,hairnets,andfacemaskswillbeneededshouldtheclient
requestoftheactivityrequirethem.

Staff
ACertifiedTherapeuticRecreationalSpecialistwouldberequiredtobeatthis
facilityinordertoholdandrunthisprogram.RequirementsmaybefoundinappendixA.
TheCTRSmustalsohaveextensivebakingexperienceandknowledge.Priorworkina
bakeryorrestaurantispreferred,butnotrequired.Theymustsimplyshowthattheyknow
aboutvarioustypesofdishesandhowtheycanbesafelyappliedasatherapeuticactivityto
ourclients.
Inadditiontothetherapist,45volunteers,preferablywithbakingexperienceina
commercialkitchen,wouldbeneededtohelpclientsreadandsuccessfullyfollowrecipes,
preparefood,staysafe,andgivetipsandteachothertricksthatwouldbeeducationalto
theclient.

Theycanalso assistthetherapistwithselectingingredientsforthatweek's

activities.
Evaluations

Theculinaryartstherapyprogramareemployedtoassisttheparticipantstolearn
newskills(orregainthosethatarelost),gainindependence,gainknowledgeonhealthy

eating,andhowtoamealforpartyorgathering.Eachsessionthatisimplementedwillbe
evaluatedusingthePostSessionReportForm(AppendixB).
Clientsareexpectedtomeetthecriteriastatedintheperformancemeasures.This
willtakeplaceduringdiscussionsbeforeandaftereachsession.Anychangesor
modificationsthatweremadeduetoapatientsresponseandorconditionwillbenotedin
thisform.TherecreationaltherapistandRTassistants,willrecordtheprogressmadeby
eachclientduringandaftereachsessionbydocumentinginthePerformancecriteriasheet
(SeeAppendixC).Eachpatientwillbeevaluatedindividuallyhowever,eachactivityand
sessionwillbethesame.Theyonlydifferenceinthisprocesswillbeeachindividuals
outcomegiventheremaybemodificationsneededalongwithconsideringmentalhealth
andskilllevel.Thestaffwillprovideinteractionandinterventionwhenthepatients
frustrationispreventingthemfrommovingforwardorshouldanotherproblemarisefrom
thesession.Anexampleoftheprogrambecomingapotentialproblemwouldberegarding
clientswithdepression.Thisr
enewedinterestinfoodcouldpossiblyturnintoaweight
problem
.

Otherthanleadingactivities,thestaffisheretooverseeandmotivatetheclients
skillenhancementandsimplytoenjoytheirtime.Thesequenceofactivitiesislogicaland
appropriateforthisgroupofchildrenatthehospital.Forexample,byprovidingenough
timeforchildrentocookandeatorsharetheirbaked/cookedgoodsduringeachindividual
sessionandasaprogramthetotalof9weeksisenoughtimeforchildrentothink,research
andgetmorecreativeaboutfutureandpastactivities.Thegoalsandobjectivescreatedfor
eachsessionweretonotonlyhelpthechildrenwithlearningtofollowarecipe,cook,bake,

andtoorganizeameal,buttoalsobringoutthecreativenesstheymaybewithholding.At
theendoftheday,theartofculinaryisjustthat,anart.Sohavingthisopportunitydoesnt
alwayshavetotargetaspecificproblem,butsimplycouldelevatetheirmood,helpclients
focusononethingtheymaylovewhichinturnwillhelpthemthroughtheirtimeasa
patientinthishospital.Tokeeptheirmindsdistractedandcontent.Eachsessionhasa
sufficientamountoftimetomeetthesegoalswithouthavingthechildloseinterestinthe
program,andcontinuetolookforwardtotheirfinishedbakedgood.
ThePostSessionAnalysisForm(AppendixB)willbeusedattheendoftheprogram
toevaluatetheoveralleffectivenesstheprogram.Youcanseewheretheprogramwas
successfulandwhereitmayneedsomechanges.Hereyoucanseeasummaryofhowthe
