When

All restaurants will have the prayer times printed and posted for the week in the kitchens. In
regards to closing time for prayer, unit will be closing 15 minute prior to prayer time and
opening immediately after the prayer is finished.

The Operations Managers, Regional Managers or the Director of Operations will be visiting
underperforming units in a monthly/quarterly basis for proper planning and identify factors that
contributes why the unit is under performing along with the immediate solution to resolve it.

The operations team is focused on ensuring each restaurant has 2 quality pre-shift briefings
each day.
Focus of the Week
In the briefings the restaurant manager will be setting goals for the shift and covering the
weekly focus that is emailed out each week.

The operations team is also focused on pre sauce & cheese, pre topping of pizza's going into
each volume shift with compliance to prescribed holding time.
Speed of Service

Restaurant Visit and Coaching

The restaurant manager will send an email by the end of business daily based on the previous
product mix report to their Area Coach indicating what they prepared prior to each shift. This is
also reinforced from the weekly focus that is emailed out each week.

To create better coaching & training during restaurant visit, the Area Coaches will also be
working in just one restaurant for their entire shift,one day each week to allow them better
evaluate the restaurants performance, give feedback and direction to their teams.
The Area Coaches will additionally be able to work with the management team on when there
are training opportunities during the shift
