Vegetarian Minestrone

1 TB Olive oil

1 medium onion, sliced

2 carrots, thinly cut

1 turnip, chopped (you can use a potato instead)

½ cup frozen corn

1 cup frozen broccoli or cauliflower

1 can white beans, rinsed and drained

1 can tomatoes with juice

3-4 cups water

1 cup shell or small pasta

Oregano, salt, pepper, garlic powder, and other seasonings to taste

In a large pot, heat olive oil on med-high heat. Add onion and carrot, sauté until onion is starting to turn
brown. Add turnip (potato), corn, broccoli, beans, tomatoes, and enough water to cover. Bring to a boil
and simmer for 15 minutes. Add pasta and seasonings you desire and boil for another 10 minutes, or
until pasta is tender.

This soup is great because you can use leftover veggies or any bag of frozen vegetables. Try adding kale,
cabbage, or lima beans!
