APPLE BUTTER 1. Put an inch or so of water or apple cider in bottom of the pot. 2.

Cut apples into quarters and throw them in pot cores, skin, and all. 3. Throw in a few whole cloves and cinnamon sticks 4. Put pot on high, bring to a boil, then turn to medium low. Cook until apples are soft through and through. 5. Place food mill over crockpot and process all the apples 6. Fill the crock pot to within an inch of full (if theres that much). 7. Season: 2 tb cinnamon, 1 ts ground cloves, ts allspice, salt, and maybe nutmeg and 2 cups sugar. 8. Cook on low, with the top balanced on top of two spoons or skewers for 6- 12 hours. 9. Add 2 to 4 quarts more of apple sauce and more sugar if we want. 10. Cook for an additional two hours to mix flavors and season if necessary. 11. If it isnt buttery and creamy enough, put it through food mill with fine sieve, or sieve, or blender, maybe cuisanart? 12. Put the butter into sterilized hot jars. 13. put jars through hot water bath to seal them.
