Starters

Sea Scallops Cafreal Large sea scallops lightly grilled and served with green herb marinade and caramelised garlic. Pepper Crabs Crunchy soft shell crabs generously doused with black pepper, garlic and Goan Masala. Prawn Balchao A tangy prawn and tomatoes, served on rice crackers with fresh coriander. Goan Lobster Masala Half a lobster grilled with garlic and chilli flakes, marinated with Goan vinegar, cumin and fresh dill. Calamari de Alphonso Whole baby squids stuffed with onion, garlic, chopped Calamari, with Chef Patrick's Special Masala ground in Goan vinegar and feni. Prawn Piri Piri Prawns marinated in Chef Patrick's Special Red Masala ground in Goan port wine.

Chicken Rissoles Golden fried parcels of chicken and goan sun dried sausages fillets with a touch of

spice.

Main Courses
Galinha Cafreal Chicken marinated in green masala cooked in its own juice. Fish Reichad Grilled grey mullet fillets marinated in chillies, garlic, shallots, garam masala and malt vinegar. Baby Shark Ambot Tik Tender fillets of baby shark meat served pink with a spicy tart sauce of tomatoes and red onions. Xacuti De Lamb A spicy Goan curry made of boneless lamb cubes, roasted coconut and exotic spices. Pork Sorpotel A spicy concoction of pork, liver, fenni, palm vinegar, red chillies and spices.

Pork Vindaloo Cubes of boneless pork cooked in special Vindaloo masala, with Goan vinegar. Pinto Beans Samaray Black eyed beans, red pumpkin and coconut.

Accompaniments
Sannaas Steamed dumplings fermented with fresh toddy. Goan Red Rice Pulao Nutty and full flavour red rice sauted with mixed peppers and onions. Odde Leavened whole wheat flour and rice flour fried breads. Churricco Refragedo Rice cooked in chicken stock, topped with Goan sausages.

Dessert
Bebinca Baked layered pudding made with coconut juice, flour and sugar. Doldol De Francis Goan jaggery (palm sugar) and rice flour pudding with cashew nuts. Alle Pelle Pancakes stuffed with grated coconut mixed with nutmeg and Goan jaggery. Attaul Channa dal (lentils) cooked in coconut juice, grated coconut, cinnamon and Goan jaggery.
