Holiday Open House

Emmas Gingerbread Muffins

1c. sugar c. margarine softened c. shortening 3 eggs c. molasses c. golden or light corn syrup

3c. all-purpose flour 2t. cinnamon 2t. ground ginger 1t. nutmeg 1-3/4 t. baking soda 1c. buttermilk

Blend together sugar, margarine and shortening. Beat in eggs, one at a time. Add molasses and corn syrup; set aside. Sift together flour and spices. Dissolve baking soda in buttermilk; add to batter alternately with flour. Fill greased and floured muffin cups 2/3 full. Bake at 350 degrees for about 15 minutes.

Makes 2 dozen.
