MAGIC COOKIE BARS INGREDIENTS

1/3 cup butter or margarine, melted 1 1/2 cups Keebler Graham Cracker Crumbs --or-Keebler Grahams Original 1 can (14 oz.) low-fat sweetened condensed milk 1 1/3 cups flaked coconut 1 cup semi-sweet chocolate morsels or milk chocolate morsels 3/4 cup peanut butter chips or butterscotch morsels 1/2 cup chopped pecans, walnuts or almonds (optional)

DIRECTIONS
1. Spread butter in 13 x 9 x 2-inch baking pan. Sprinkle crumbs over butter. Evenly pat crumbs into pan. Drizzle milk over crumbs. 2. Sprinkle coconut, semi-sweet morsels, peanut butter chips and nuts (if desired) over top. Bake at 350F for 25 minutes or until light brown around edges. Cool completely before cutting into bars. Store in airtight container in refrigerator.

CARMEL APPLE CHEESE TARTS


Preparation Time: 15 Mins. Total Time to Serve: 3 Hours 40 Mins. Servings: 12

INGREDIENTS
2 packages Keebler Ready Crust Mini Graham Cracker Pie Crust 1 can (21 oz.) apple pie filling, divided 1 package (8 oz.) cream cheese, softened* 1/2 cup sugar 1 teaspoon lemon juice 1/2 teaspoon vanilla 3 eggs 1/2 cup caramel ice cream topping 1/3 cup pecans, toasted**

DIRECTIONS
1. Place crusts on baking sheet. Spread enough filling in each crust just to cover bottom. Set aside. 2. In large mixing bowl beat cream cheese, sugar, lemon juice and vanilla on medium speed of electric mixer until fluffy. Add eggs, one at a time, mixing until just combined after each addition. Gently spread over filling in each crust. 3. Bake tarts on baking sheet at 350F for 25 minutes or until centers are almost set. Cool for 1 hour. 4. Refrigerate tarts at least 3 hours. Spread remaining pie filling over each tart. Drizzle with ice cream topping. Garnish with pecans. Store in refrigerator. *NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds. **NOTE: To toast pecans, spread evenly on baking sheet. Bake at 350F for 5 to 10 minutes or until light golden brown, stirring once or twice.

KRISPY SCALLOP TOMATOS


Preparation Time: 10 Mins. Total Time to Serve: 40 Mins. Servings: 8

INGREDIENTS
6 medium ripe tomatoes 2 cups Sunshine Krispy Original crackers --or-2 cups Keebler Zesta Original crackers 1 teaspoon salt 1/4 teaspoon pepper 6 tablespoons melted butter 1/2 cup minced onion 2 tablespoons water Chopped parsely (optional)

DIRECTIONS
1. Slice tomatoes into 1/2 inch slices. Combine crumbs, salt, pepper and 4 tablespoons of melted butter. 2. Sprinkle one third of crumb mixture into bottom of a greased 8x8x2 inch baking pan. Arrange half of tomato slices over crumbs. Sprinkle with half of minced onion. Sprinkle with another third of crumbs. Repeat. 3. Drizzle remaining melted butter and water over top of last crumb layer. Cover; bake at 425F for 15 minutes. Uncover, and continue to bake until tomato slices are tender (about 15 more minutes). Sprinkle, if desired, with chopped parsley.

ZESTY SALTINE MEATLOAF


Preparation Time: 20 Mins. Total Time to Serve: 1 Hour 25 Mins. Servings: 6

INGREDIENTS
1 egg, slightly beaten 1/3 cup milk 3 tablespoons chopped onion 1 teaspoon Worcestershire sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1 1/4 cups Keebler Zesta Original crackers 1 pound lean ground beef 1 cup shredded Cheddar cheese 1/4 cup ketchup 2 tablespoons brown sugar 1 teaspoon dry mustard

DIRECTIONS
1. In large bowl stir together egg, milk, onion, Worcestershire sauce, salt and pepper. Stir in 3/4 cup of cracker crumbs. Add ground beef. Mix well. On wax paper pat meat into 12 x 9-inch rectangle. 2. In small bowl toss together remaining cracker crumbs and cheese. Sprinkle over meat. Starting with short side, roll up meat, jelly-roll-style, using wax paper to help roll. Place in shallow baking pan. Bake at 350F about 40 or until internal temperature reaches 160F. 3. Meanwhile, in small bowl stir together ketchup, brown sugar and mustard. Spread over meatloaf. Bake at 350F for 10 minutes more. Let stand for 10 minutes before slicing.

MASHED SWEET POTATOS


Preparation Time: 15 Mins. Total Time to Serve: 35 Mins. Servings: 8

INGREDIENTS
2 cans (23 ounces each) sweet potatoes, 6 tablespoons margarine or butter, softened, divided 1/2 teaspoon salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg 2 cups miniature marshmallows, divided 2 cups Kellogg's Rice Krispies cereal 3 tablespoons firmly packed brown sugar

DIRECTIONS
1. Combine sweet potatoes, 4 tablespoons of the margarine, salt and spices. Beat until smooth. Stir in 1 cup of the marshmallows. Spread in 10 x 6 x 2-inch (1 1/2-quart) glass baking dish coated with cooking spray, or individual dishes. Top with remaining marshmallows. 2. Melt remaining margarine. Combine with KELLOGG'S RICE KRISPIES cereal and brown sugar. Sprinkle over marshmallows. 3. Bake at 350 F about 20 minutes or until hot and cereal is golden brown. Serve hot.

SPINIACH PATTIES
Preparation Time: 35 Mins. Total Time to Serve: 35 Mins. Servings: 10

INGREDIENTS
1 package (10 oz.) frozen chopped spinach 1/2 cup finely chopped onion 1 clove garlic, minced 1 egg yolk 1 cup crumbled feta cheese 1/2 cup finely shredded Parmesan cheese 1 teaspoon dried oregano leaves 20 Keebler Town House Original crackers 1/4 cup all-purpose flour 1 egg, slightly beaten 1 tablespoon milk 4 teaspoons vegetable oil

DIRECTIONS
1. Cook spinach, onion and garlic according to spinach package directions. In colander drain well, using back of spoon to press out excess moisture. 2. In medium bowl stir together egg yolk, feta cheese, Parmesan cheese, oregano and spinach mixture. Shape into twently 1/2-inch thick patties. 3. Finely crush crackers. In shallow dish place flour. In another shallow dish stir together 1 egg and milk. In third shallow dish place cracker crumbs. Dip spinach patties in flour, shaking off excess. Dip into egg mixture, then into crumbs. 4. In large skillet cook patties in hot oil over medium heat for 4 to 5 minutes or until golden brown, turning once. Serve immediately. NOTE: Patties may be kept warm at 250F for up to 30 minutes.

HOT AND SPICEY CHICKEN QUESADILLA


Preparation Time: 5 Mins. Total Time to Serve: 15 Mins. Servings: 8

INGREDIENTS
1 1/2 pounds chicken meat cooked (southwestern grilled style) 16 flour tortillas 12 ounces Mexican style shredded cheese (to taste) 1/2 bunch cilantro, chopped or 1 teaspoon dried cilantro, if desired 1 can (7 oz.) green chili pepper (to taste) 1/2 box Sunshine Cheez-It Hot & Spicy crackers

DIRECTIONS
1. Arrange chicken meat over tortillas. Top with cheese, cilantro, peppers and Cheez-It Crackers. Cover with remaining tortillas. Cook over a low to medium heated grill until cheese melts, about 4-5 minutes. Cook on both sides of the tortilla. Serve with guacamole, salsa, and Sunshine Cheez-It Hot & Spicy crackers.
