The History Of Republic of Cavite

This (roughly) 4, 000 square meter property was acquired by Pacumios parents ten years ago. This was still a farmland back then. There were no roads, almost no signs of civilization; thats why we had to donate a portion of the land for the road project, recalls Pacumio who also owns and manages Cavites Towns Delight Catering. In 2001, the year before our catering business turned 30 years {old}, I thought about doing something that would allow us to give back to our kababayans the support that they gave Towns Delight, he continues. And since Im very patriotic, I thought putting up something that would give pride to the Cavitenos and so we came up with this concept -- a venue that would showcase the historical places in Cavite and at the same time promote the provinces native delicacies. In 2001, Architect Corcuera and his team started developing the property and after a year, the new Republic of Cavite was inaugurated.

A sojourn to the historic province of Cavite is never complete without bringing home special delicacies for which the province came to be known. And for this goal, the best place to visit is the Republic of Cavite situated right at the heart of Cavites capital. Starting from the edifice, the Republic is a replica of Emilio Aguinaldos mansion in Kawit, Cavite and has rooms and function halls aptly named after historic places. But the best thing about the restaurant is its wide array of native delicacies that are unique and really delicious as they are prepared with original recipes. Who wouldnt be fascinated and intrigued by delicacies called Lihim ni Lola, Lihim ni Emilio and Paborito ni Aguinaldo? Lihim ni Lola is an original recipe of Towns Delights matriarch Mama Cely. One look at it and you would think its your ordinary rice pudding. But as you munch the glutinous violet rice cake, you would reach its super delicious filling that only Lihim ni Lola has. Its called lihim because it is supposed to be a little secret and the only way to discover it is to go grab a piece and

unravel the secret for yourself! Lihim ni Emilio, on the other hand, is a yummy dessert consisting of suman sa ibos, chico and mango topped with ice cream and pinipig. Another blockbuster among patrons is Paborito ni Aguinaldo, fried camote strips rolled in ground peanuts and jackfruit strips and finally wrapped in lumpia wrappers. These lip-smacking delicacies are perfectly paired with cold flavored salabat with langka, pandan or tanglad, just pick your choice of flavor.

Historical Room
Republic of Cavite looks almost like the Aguinaldo Shrine in Kawit with red roofs symbolizing the provinces resistance (to the colonizers). It also has a watch tower and stately balcony with the Philippines flag and two cannons installed at the center (of the balcony). The ground floor houses Plaza de Armas, another historical place in Cavite where the provinces 12 martyrs were executed. The three meeting rooms dubbed Silid Mapagtiis (a political party in Gen. Trias) , Silid Magdiwang (in Noveleta), Silid Magdalo (in Kawit-Gen. Aguinaldos party) are likewise found hereperfect venues for small gatherings. Bulwagang Cuenca, named after the ancestral Cuenca House in Bacoor, Cavite where Gen. Aguinaldo once held office, is situated on the second floor. This hall is ideal for big events such as weddings and venues and can accommodate a maximum of 100 (seated) guests. Sala De Gobernador (Seat of Supremacy) meanwhile is located at the attic. This is patterned after Gen. Aguinaldos livng room or sala where private meetings were held. However, on a normal day, this room serves as Towns Delights showroom complete with table settings, floral arrangements, cakes and other wedding decorations. On the other hand, those looking for an outdoor venue can rent out Republic of Cavites spacious garden, which according to Pacumio is a popular venue for weddings and debuts. This lush garden can accommodate a maximum of 300 guests.

Cavites Recipe
The basement is devoted to the hungry guests craving Filipino dishes cooked Cavitenos-style. The Republic Chicken BarbeQGrill offers the Pacumios authentic recipes that Towns Delight Catering has built its reputation on for over three decades, according to Pacumio. Our catering business has been around for 35 year, but its only this years that we decided to get into restaurant business when we opened the BarbeQGrill two months ago, shares Pacumio. I said maybe its about time we share our recipes to the public, this way they will be familiar with the Cavite delicacies, he adds. Here, we dont only cook our food Caviteno-style, but we also utilize ingredients that we are widely found in town, for

instance, tahong or mussels and so my wife Connie who acts as our chief chef, came up her own version of kilawing puso ng saging with tahong. The BarbeQGrill is popular for its flavorful chicken barbecue, which according to Chef Connie is really an ordinary recipe that homemakers are familiar with. There is no secret formula to it. We just marinade the chicken for one hour to two in soy sauce {and} pineapple juice flavored with seasoning, garlic, onion, peanut butter, and local chili peppers o siling labuyo. Then we grill it for two hours, she explains. The barbecue is served with Java rice, and grilled eggplant salad with salted egg, pickled mango, and lettuce. Among the other must-try offerings are the sinful and appetizing crispy binagoongang baboy, pork dinuguan, and fried lumpiang bangus. The sweet-toothed are treated to Republic of Cavites native kakanins or rice cakes such as lihim ni lola ( a purple rice cake with salted egg and cassava filling) onde onde (colorful rice flour with syrup inside), puto pao (puto topped with salted egg and cheese) halayang kalabasa, and paborito ni Emilio ( a special turon filled with fried sweet potato strips rolled in ground peanuts and jackfruit strips wrapped in lumpia papers). Diners who just to have coffee for dessert can try the best coffee in town-Caf Amadeo. Apart from the food we have on the menu, we also sell Cavite-made products here like tahong chips, homemade cookies, Caf Amadeo coffee, among others because I want to help other Cavitenos promote their products. This way, when there are tourists who want to see and try what Cavite has to offer, they can just come here, says Pacumio.
