INTELLIGENCE FOR THE WINE CONSUMER

BY LEN NAPOLITANO

What can be learned from a visit to a winery?

I enjoy visiting wineries and learning as much as I can about the wines, the winemaker and the history of the winery. In addition, the vineyard in the peak of the growing season June through August is a beautiful sight with clusters of red and green grapes under bright green leaves. Winery tasting rooms are as varied as the wines themselves and are always welcoming, whether its a large and lavish room or simply a folding table among the barrels in a storage facility. A winery experience also is an opportunity to take a winery tour or talk to the people who are pouring the wines for tasting. This is a chance to learn something about their wines. Whether or not you like the wine, the time spent in a tasting room or winery is a time for discovery and learning. You should feel free to ask questions like Is this wine filtered or unfiltered? or Does the winery source grapes from outside its own property or are the grapes estategrown? Im always curious to know how many cases of wine are produced and how long the wines are aged before they are released to the public. I also like hearing about the history of a winery and how its owner became involved in the wine business. Its surprising how many winery owners started their professional careers in areas completely outside the wine industry. In almost every case it was a deep passion for wine that motivated them. Maybe the best part of the winery experience is breathing in the aroma of a winery during the time of harvest, from September to November, when tons of just-picked grapes are nearby, some already in the process of fermentation. Its a sweet smell of fresh picked fruit mixed with notes of great expectations for a new vintage.

Trellising: How Grapevines Got a Shape

Every grape vine pretty much looks like every other one, right? Well, while driving past them it may seem to be the case, but the truth is small differences in the shape of the vines can have major impacts on wine quality, yield, bouquet, taste and mouthfeel. Believe it or not, the shape the grapes are grown within has a major but often unrecognized impact on what ends up in your glass. Trellising is dirty, un-sexy work, but it's the lifeblood of growing great wines. The canopy is what converts "sunlight into wine," so it's vital on many levels. Each style of trellising has to take into account a number of variables along the way to creating a structure which allows for vine balance; that's what's key to producing grapes with lots of flavor without damaging the vine or its roots through stress, over- or undercropping, or mismatching vine to location. These options include number of shoots per vine, number of leaves per shoot, number of clusters per shoot, orientation toward the sun, shading of the grapes via the canopy, and the overall shape of the canopy, which is determined by the guidewires of the trellis. There are dozens of possible combinations in commercial use today. There are two basic kinds of trellising, though, vis--vis various ways of positioning the shoots vertically to maximize access to sunlight while maintaining less vigorous growth in poor, infertile soils, or different styles of dividing the canopy vertically or horizontally to control for vigorous growth in soil too-good for grapevines. What? I sense you thinking: How can soil be too good? Everything you've absorbed about growing things the "right" way is the opposite for winegrowing. Soil that is too good encourages excess leaves and excess fruit. The former stresses the vine and keeps it from putting its energy into the grapes. The latter dilutes the flavors in the resulting wines. When winegrowers talk about "Balance is key," that's what they mean: all of the elements are properly enfolded together. Some of the more common vertical shoot positionings, known generally as "VSP," take the forms of candelabra. Guyot divides the vine quite low to the ground, leaving just two canes regrown each year below guidewires, to which shoots will attach themselves. VSP generally makes the arms permanent, allowing for spurs on the arms from which the vertical shoots grow, and Cordon goes one step further with its permanency, with the shoots generally positioned up, over and then back down so that the clusters are shaded from direct sunlight. In contrast, divided canopy trellising is designed to try to take away excess growth by making the vine work harder for what it does put out. Winegrowers do this by creating more sections with more canes, shoots and/or cordons. Scott Henry creates multiple vertical canopies, making the vine work twice as hard. "California Sprawl" separates the canopy in two, "flopping" large sections of growth to each side; Lyre uses movable guide arms to open or close the "V" and the flop. Genva Double Curtain creates four cordons for each vine, doubling vine energy needs horizontally in contrast to Scott Henry's upright, split form. Do the range of options really matter? Absolutely, as the trellis style alone has been shown to have an impact on all levels of wine expression: softening or hardening tannins; adding or removing flavors, aromas and range of ripeness options; effecting yield, concentration, and vine life. The term "winegrowing" is a bit of a linguistic oddity, for sure, but as you can see, it's absolutely appropriate. One of the reasons it's quite fair to say civilization is wine is that, unlike just about everything else we produce, wine requires our constant attention--even long before a single grape is harvested or a bud breaks. Cheers!

CHAMISAL vINEYARDS
Boasting Wines of Near-perfect Ratings
BY MELISSA CHAVEZ

Winemaker Fintan du Fresne

Open daily 10:00a.m. to 5:00p.m. 7525 Orcutt Rd, San Luis Obispo www.chamisalvineyards.com | (805) 541-9463

Less than ten minutes from the ocean, and cradled to the west of the Santa Lucia Mountains, is Chamisal Vineyards. The location with the red, barnlike structure has the distinction of being the first vineyard planted in the Edna Valley AVA. Prior to its reincarnation as Chamisal, whose namesake is in reference to the indigenous chamise shrub, clustered with little white flowers, the vineyard was known as Domaine Alfred. Led by Terry Spitzer, the winery established the mainstay of the present-day vineyards. Boasting near-perfect ratings by national critics, its vintages became the envy of the Central California Coast. Chamisal Vineyards Fin du Fresne has shared in Domaine Alfreds award-winning legacy since 2006, and is establishing his own medal-garnering excellence as chief winemaker. The geology and enology major first worked as a viticulturist with a vineyard that helped pioneer New Zealand Pinot Noirs before a stint in Europe and later harvesting grapes in Paso Robless Westside. Among peers and visitors alike, he has established himself in Edna Valley as one of its respected and charismatic winemakers. Chamisals viticultural palette includes a total of five varietals. In all, there are 85 acres with planted vines, plus 20 more in development with a total of 25 different clones. Currently, there are 38 acres of Pinot Noir, consisting of ten clones, nearly 30 acres of Chardonnay that include seven clones, as well as varying acreage and clones of Pinot Gris, Syrah and Grenache grapes. Microclimates within their vineyard blocks enable Chamisal to develop a complex array of wines for some exciting vintages. Their line of Califa (or prettiest one) wines are heralded as the most densely flavored of single-varietal Pinot Noir, Syrah and Chardonnay wines - the latter of which scored 94 points in December 2012 Wine Spectator. Small Lot wines include the Cinq a Sept

(Grenache), Monologue (Pinot Noir) and Morrito (Pinot Noir) wines, which call attention to a particular block or aspect of the vineyard. Chamisal Estate vintages capture the terroir, or sense of place that is Edna Valley, and demonstrates the vastness of flavor profiles that their vineyards offer. They include Pinot Noir, Chardonnay, Syrah, Pinot Gris and Grenache Ros wines. Last, but not least, are the Stainless Chardonnay and Stainless Pinot Noir, for those who enjoy a crisp white or red without any hint of oakiness. The 2010 Vintners Quest Pinot Noir 8N is sourced from among Chamisals younger plantings, which has earned a special place in the Chamisal arsenal. Fin explains that the 8N designation is in reference to the number of kilometers and northward direction to the vineyard from Chamisal. These Calera clone vines were planted by the Righetti family, who have not only farmed in San Luis Obispo

Countys Edna Valley and throughout Santa Barbara County for generations, they are world-renowned for helping to establish worldrenowned tradition of Santa Maria-style tri-tip barbecues and seasonings. What better fit than Chamisals reds to make complete a culinary feast? For those interested in Chamisal Vineyards Wine Club, there are four to choose from. Led by Director of Consumer Sales Andrea Chan, Chamisal Vineyards enjoys word-of-mouth popularity for their friendly staff along with memorable wines. Visit them at 7525 Orcutt Road in San Luis Obispo every day of the week from 10 a.m. to 5 p.m., except for Thanksgiving Day, Christmas Eve/Day and New Years Day. Currently, one tasting is available consisting of Estate and Califa offerings for $12-$15. A reservation is required for groups of 8 or more. Call toll-free (805) 808-9463 or (805) 541-9463.

Opolo Vineyards
BY JEMMA WILSON

OPOLO VINEYARDS Open Sunday-Friday from 10 a.m. to 5 p.m. Saturdays from 10 a.m. to 5:30 p.m. 7110 Vineyard Drive, Paso Robles CA 93446 (805) 238-9593 | www.opolo.com Facebook: www.facebook.com/OpoloWine

When winding along Vineyard Drive passing many of Paso Robles Far Out Wineries, youll notice Opolo Vineyards, with its grandeur entrance leading you through the Zinfandel vines and up to its rustic tasting room. Nestled amongst the rolling oaks, this barn-style tasting room allows the wines and friendly staff to showcase all the thrills you need to fall in love with Opolo. Wine Club manager Chance Hochschild encourages guests to come on weekends so you can really get a feel what Opolo is all about: Fun! The large bar allows the winery to accommodate all groups of friends, the wood-burning stove and BBQ on the patio make for a great lunch date (with a wine pairing, of course!), and even chat it up with one of Opolos owners, who are never ones to miss out on the festivities. Perhaps one of the winerys most unique features is the walking trails they offer. Not only does Opolo allow guests to roam through the actual vines, they encourage it! Three trails were made throughout the property that vary in degree of difficulty, but all with outstanding views of the vineyard. Two of these trails feature picnic areas at the top, and be sure to look out for owls and other wildlife on your way up. If your legs are already stretched out from a day of wine tasting, then not to worry, Opolo has you covered! Hop on their 18seater golf cart and take a cruise up to the hilltop as your guide points out the surrounding areas and vines you are passing through. A golf cart ride through a vineyard to a hilltop picnic area? Thats Opolos style for a good time! Opolos 366 acres feature multiple vines that make more than 30 different types of wine, including their flagship Mountain Zinfandel. The sustainable winery was bought in 1995 by Camarillo neighbors, Rick Quinn and Dave Nichols, and they released their first vintage in 2001. They started with 2,000 cases per year, Opolo now produces around 45,000 cases per year, with Rick and Dave still incredibly hands on, from production to sales. Their passion for winemaking allows to them experiment and showcase the uniqueness that you can find in their blends. Opolo has not only made a name for itself with its award-winning wines, but it is also known as the go-to winery for events. They are most notably known for their Harvest Festival in October, which features their patio BBQ, live music, dancing and of course their infamous Grape Stomp Party. However, Opolo keeps the fun going all year long. This month, join Opolo as they celebrate the 12th Annual Zinfandel Festival Weekend as they hold their Winemaker Dinner on Friday, March 15th at 6:30 p.m. and their party on the patio throughout the rest of the weekend. You can make the weekend even more special by staying at The Inn @ Opolo, the breathtaking three-bedroom home located on the property featuring a gourmet breakfast, luxurious suites and of course, wine. Opolos motto, Great times, award-winning wines its a happy combination! speaks true to the winery. When you come to Opolo, you are in for a good time. The welcoming atmosphere makes you want to become a part of the Opolo family, because when theres wine and fun involved, whats not to love?

WINE COUNTRY DINING

Estrella Restaurant
Spain, Argentina, Chile and Mexico all influence the lively flavors at Estrella restaurant in downtown Paso Robles, where fresh, handmade ingredients combine to create vibrant, flavorful fare. Everything is made in-house here, from the slow-cooked black beans, to the plump yucca fries, to the piquant enchilada sauce that bathes the restaurants popular braised beef short-rib enchiladas. We asked customers from our sister restaurant, Roberts, what type of cuisine they wanted to see in Paso, says Estrella coowner, Brenda Clouston. There was an overwhelming request for a Spanish-inspired food. We took that concept and expanded it to include a range of Latin cuisine. The response has been very positive. Estrellas bold dcor matches the restaurants lively cuisine with warm, orange-toned walls, exposed brick, custom-made bar inlayed with snakeskin and hand-made chairs tastefully covered in cowhide. We wanted both locals and out-of-town guests to feel comfortable here, says Clouston. We designed the dcor with the cuisine in mind, but we also wanted to add a touch of Paso. At the restaurants helm stands Chef Ryan Swarthout, who also manages the kitchen at Roberts. Among his most popular dishes are the rock lobster tacos drizzled with chipotle cream, the Caribbean coconut-braised chicken, as well as the roasted corn and crab-stuffed chile rellenos, which arrive light, tender, and delicious. Guests at Estrella can choose from the extensive wine list, which features a selection of local favorites, as well as those sourced from Argentina, Spain and Chile. Beer aficionados will appreciate the restaurants global-influenced beer list, with its selection of brews from Spain, Brazil, Mexico, Jamaica and Costa Rica. Also of note are Estrellas special beer-paired dinners, which include three courses paired with beers sourced from a particular brewery. When we designed Estrella, our main goal was to create beautiful, affordable, delicious cuisine, says Clouston. I believe weve done just that.

LAETITIA vINEYARD & WINERY

A Family Affair
BY JAIME LEWIS

LA TITI LA E TI TI A LAETITIA AE
VINEYARD & WINERY

Open daily 11:00a.m. to 5:00p.m. 453 Laetitia Vineyard Drive, Arroyo Grande www.laetitiawine.com | (805) 481-1772

While Laetitia Vineyard & Winery certainly has the elegance and sophistication to stand next to any world-class producer, it is, at its heart, a family-owned and operated estate winery. With a welcoming tasting room, plenty of room to roam, and a staff of talented people in the field and in the cellar, Laetitia is an ideal spot for anyone who enjoys the warmth of a place that feels like home. Laetitias legacy of family winemaking began in 1985 when Dave Hickey was hired for construction at Laetitias predecessor, Maison Deutz. As he worked around the winery, Dave became intrigued with the traditional, labor-intensive process of making sparkling wine called Mthode Champenoise. Pretty soon he was overseeing winery systems operations, and his enthusiasm for the winemaking craft was rubbing off on his eldest son, Eric. Not long thereafter, Eric also joined the Maison Deutz crew full time. By the time the property had been bought and named Laetitia Vineyard & Winery, both Dave and Eric had become institutions in the cellar: Eric crafting still wine like Laetitias famous Pinot Noir, and Dave making the award-winning sparkling wines. Meanwhile, the rest of Daves family was also developing an appreciation for fine wines. His wife, Carmen, manages the tasting room, as well as wine club and hospitality; his youngest son, Dustin, is a supervisor in the cellar; and middle son, Jeremiah, spent several years working in the Laetitia Cellar handriddling sparkling wine bottles. In 2000, after 12 years working up the ranks, Eric was named Head Winemaker and General Manager, and has since become President of the brand, while Dave is Sparkling Winemaker and Vice President of Production. Their winemaking styles are similar in that both winemakers know their fruit intimately, value tradition as well as innovation, and lushness as well as restraint. I always dreamed that whatever I did with my life, my kids and grandkids would be close by, says Dave. People ask me a lot what its like to have my son

Quality Craft Beers from Figueroa Mountain Brewing Co.

This family-owned brewery started by Jim and Jaime Dietenhofer of Los Olivos, has been life-long dream in the making. Harnessing their Bavarian heritage the Dietenhofers wanted to create a craft brewery in the Santa Ynez Valley that focused on creating the highest quality beer and help add to a growing hop culture in the Central Coast. Utilizing the skill sets from award-winning head brewer A.J. Stoll and his brew team, Figueroa Mountain Brewing has been able to create a line-up of seven quality craft beers (soon to be more). The brew team has been able to earn multiple medals including three golds in a very short period of time (open since 2010). In addition to selling beer in draft and bottles on the open market, Figueroa Mountain Brewery has a tap room that puts the patrons a few feet away from the brewing action. Complete with a state-of-theart stainless brewing system, customers can enjoy the pint of beer that was made in the same room and epitomizes freshness. An experience that includes live music on Fridays, and a complete food and wine list. Beer lovers may also enjoy the Fig Mtn Beer truck complete with taps on the side ready to pour. The truck can be seen at a large list of events throughout the Central Coast. Stay tuned to www.figmtnbrew.com for more information, or follow them on Facebook: Figueroa Mountain Brewing for the latest news and updates.

as a boss. I can truthfully say it is wonderful. Hes a great boss and I love it. Such geniality is not exclusive to the Hickey family. Visitors to Laetitia Vineyard & Winery often find its openhearted ambiance addictive, from the approachable and knowledgeable tasting room staff to a little friendly competition on the bocce ball court. A perfect family outing to Laetitia might include a stroll through the vines on the vineyard walking trail, a tasting of the winerys varied offerings, and a picnic on the lawn overlooking the valley, paired with one of Eric or Daves recent releases: Dave and his team crafted the 2008 Laetitia Brut Ros from Martini 13, 4 and 76 clones of Chardonnay and Pinot Noir. From vintage to vintage, the Brut Ros consistently exhibits subtle floral aromas and hints of berries, along with a luscious texture. For a delicious al fresco appetizer, the Brut Ros might be paired with a platter of smoked salmon, almonds, Brie and Fontina cheeses. Erics recent release of the 2010 Laetitia Reserve du Domaine Pinot Noir is rich in dark fruit, complexity and spice as a result of being made from the most concentrated fruit on the estate. Focused tannin and velvet-like texture combine with dark raspberry tones and deep toast for an abundance of mid-palate richness, while damp earth and spice complement and round out olallieberry jam flavors. Laetitia Pinot Noir pairs delectably with a simple (and easily packable) Muffuletta sandwich: Ingredients: 20 ounces tapenade (such as Trader Joes Green Olive Tapenade) 1 round peasant bread (about 7 inches in diameter, 5 inches high), halved crosswise, insides pulled out 4 ounces each thinly sliced Genoa salami and mortadella (found in the deli section) 4 ounces thinly sliced provolone cheese Directions: Hollow out the bread to make room for sandwich filling. Spread half of tapenade on the bottom half of the bread. Layer with salami, provolone and mortadella, then top with the remaining tapenade. Cover with the top of the bread, press down and let stand for 10 to 15 minutes. Wrap the sandwich in plastic wrap and let stand for 1 hour before serving. For more information about Laetitia Vineyard & Winery, call 1888-809-VINE, or visit www.LaetitiaWine.com.

Perfect Pairs
BBQ Ribs with Cabbage Slaw Paired with the Jada Vineyard 2009 Jack of Hearts
BY ALExANDRA CHARLSEY

Grilling season has to be one of my favorite times of the year and being from the Midwest, I appreciate fine barbecue. Everyone needs a good barbecue rib recipe and this one is from Chef Ryan Messina, Head Chef, Tasting Room Manager, and Partner of Jada Vineyard and Winery. Her easy dry rub recipe reminded me of Memphis style barbecue and my ribs came out beautiful and so flavorful. I followed the recipe exactly and put just enough sauce on to glaze the ribs so there was a little stickiness as it sat on the slaw. The cabbage slaw had that perfect balance of creaminess and tang so it didnt detract from the main star of the dish. No doubt she has paired this dish with the Jada Vineyards 2009 Jack of Hearts. The fruit flavors in the wine meld wonderfully with the dry rub crust on these ribs and the supple tannins round out the earthiness of the pork. This wine is a beautiful addition to any summer barbecue and can also be paired with a cows milk 2 year aged Gouda cheese for those afternoons when you just fancy a cheese plate. The 2009 Jack of Hearts is comprised of 50% Estate Petite Verdot, 45% Estate Cabernet Sauvignon and 5% Estate Merlot and received 91pts from The Wine Advocate. This wine is a showcase for their all estate Abreau clone of Petit Verdot. Each year it produces the most interesting and consistent wines with beautiful color, generous tannin and an intoxicating aromatic presence. Clone 15 Cabernet Sauvignon proves its competence again by blending and marrying with flawless integration. Stoic in its youth, this wine continues to reward over time with additional layers of complexity. Aromas of blackberry, cherry, fig, anise and blueberry pie fold into flavors of currant, ripe plum, pomegranate, minerals, hazelnut and toffee. When you taste the heartiness and depth this wine provides, you will want to have enough on hand to get you through the summer months. Their tasting room is nestled in the heart of the Templeton Gap, at 5620 Vineyard Drive, off of Highway 46 West. Stop in for a tasting or a wine and gourmet cheese pairing. They are open daily from 11 am to 5 pm and with sunny days ahead, you will not want to miss their premium wines and magnificent views from their tasting room. For tours or to schedule a VIP tasting, please call (805) 226-4200 to make an appointment.

BAILEYANA WINERY

BAILEYANA WINERY TANGENT, TRENZA, CADRE AND ZOCKER Open Daily 10 a.m. to 5 p.m. 5828 Orcutt Road, San Luis Obispo (805) 269-8200 | www.baileyana.com

Old world inspired. Surpassing new world standards. Sustainably grown. Those nine words sum up with philosophy behind the wines of preferred tasting room: Baileyana Winery. Baileyana wines offered at the historic Independence schoolhouse alongside its sister wineries: Tangent, Trenza, Cadre and Zocker. Owners Jack and Catharine Niven were pioneers of winegrape planting in the Edna Valley of San Luis Obispo in the 1970s with Paragon Vineyards, and founded Baileyana Winery over 25 years ago. Named for the neighborhood where Catherine and Jack first met, Baileyana Winery is dedicated to creating handcrafted Pinot Noir, Chardonnay and Syrah from the Niven familys estate Firepeak Vineyard. Adjacent to Baileyanas state-of-the-art winery, Firepeak Vineyard is located at the base of Islay Mountain, the last in a chain of extinct volcanoes known as the Seven Sisters. The volcanic soils and close proximity to the Pacific Ocean make this vineyard a perfect location for winemaker Christian Roguenant to create exceptional Burgundystyle wines and cool-climate Syrahs. Visitors will be able to taste the unique Baileyana wines alongside the wines from its four sister wineries: Tangent, Trenza, Cadre and Zocker. The tasting room is located in the beautiful historic Independence Schoolhouse. Built in 1909, it remained a schoolhouse until it closed in 1956 and was converted into a private residence. In 1998 the Niven family renovated it and converted it into a beautiful tasting room where visitors can enjoy breathtaking views while tasting on the patio, or partake in a game of bocce ball on one of two nearby courts. Baileyana offers an incredibly diverse array of wines to taste on a daily basis. Each of the four sister wineries are also owned by the Niven family, yet Roguenant practices very different winemaking techniques for each. Tangent offers crisp, refreshing white wines made in stainless steel; Trenza (which means braid in Spanish) showcases blends; Zocker is a German-style winery that offers Reisling and Grener Veltliner; and Cadre is known for a high-end Pinot Noir from four different AVAs. There is something for all tasters, with the tasting list and wine club featuring offerings from each winery. In addition to wine, there are also specialty selections of gourmet foods, giftware, apparel and home decor. Visitors will often have the chance to meet members of the Niven family or Roguenant, but for a more intimate experience be sure to sign up for the Yacht Cruse hosted by Roguenant on Saturday September 7th. Cruise the Morro Bay Harbor aboard the 72' yacht; Papagallo II. Meet Winemaker Christian Roguenant and enjoy Niven Family Wine Estate wines paired with hors d'oeuvres prepared by Chef Leonard Gentieu. For tickets contact Lori at (805)269-8206 or Wineclub@Baileyana.com for more information. Baileyana Winery is open daily from 10 a.m. to 5 p.m. and is located at 5828 Orcutt Road in San Luis Obispo, CA. WILD HORSE WINERY

BY JAIME LEWIS

Open daily from 11am to 5pm 1437 Wild Horse Winery Court, just off of Templeton Road (805) 788-6310 | www.wildhorsewinery.com

zinfandel festival Weekend, March 15th to March 17th

Wild Horse will be hosting all sorts of local favorites, from chocolate and wine pairings to cheeses and olive oils. They will also have live music on Friday and Saturday which is sure to be a jammin good time.

Looking to expand your wine knowledge and try some exclusive wines right from the barrel? Then look no further than Wild Horse Winery, located on the east side of Templeton. Beginning this month, Wild Horse is offering winery and vineyard tours which they have dubbed "A Grape to Glass" experience. In these tours, visitors can expect to discover the inner workings of the winery and all the behind-the-scenes action that goes into making good wine. Michael Aanerud, Wild Horse's Visitor Center and Tour Lead, is excited and ready to show guests around their property. "Bring your shoes and questions!" he said. The goal with these tours is to create an interactive group that leads to not only an educational tour, but also an entertaining one. Guests start off by seeing the vineyards and property, then from there, the tour leads to the barrel room where all of the wine is created; from barrel to the bottle. Going back outside, you get the meet two Wild Horse residents: Floyd and Dolly, Wild Horses vineyard llamas. The llamas play an integral part of the winerys sustainability program, as their job is to protect the sheep. The sheep are used to naturally control the weeds and grasses around our gray water recycling ponds. This process is just one of the many ways Wild Horse is going green at their winery. Besides, who wouldnt want to say they got to meet the Dolly Llama? Back on the tour, guests are treated to small lot, reserve wines straight from the barrel as well as tasting the full flight back in the tasting room. The tour is made to encourage everyone to ask questions and strengthen their wine knowledge, whether that be taking grape samples, measuring the wine brix, or learning how the winery bottles; this tour has it all. Throughout the year the tour will change to accommodate the seasons, so from November to June guests can expect more of a focus on the actual winery and the barrel room, and then from July to October they will get to experience more of the wine harvest and vineyards. Be sure to look out for their pumpkin patch and full organic garden throughout the year! Wild Horse is offering these tours on the weekends by appointment, with groups no bigger than 8 for a more intimate account. The tour will run approximately 40 minutes and costs $15 for the public but is complimentary to wine club members. This also includes the tasting flight at the end of the tour. Wild Horse features a small, boutique-style tasting room and to say it has an incredible patio is an understatement. The views are spectacular, coupled with lots of seating, an outdoor bar and a bean bag toss game. If theres any place to go to learn some wine techniques, take in the breathtaking views, drink some award-winning wines and have a picnic, then Wild Horse should be your pick! In 1982, Wild Horse was the 7th winery to open up in the area. They now have 40 planted acres of grapes and have estate wines and well as outsourced grapes throughout the Central Coast. They produce around 222,000 cases per year and their barrel room hosts over 10,000 French Oak barrels mainly French.

PREfERRED TASTING ROOM

PEAR vALLEY
BY CAROLYN WOODDALL

PEAR VALLEY Open Daily 11 a.m. to 5 p.m. 4900 Union Road, Paso Robles (805) 237-2861 | www.pearvalley.com

As with all good wine, the genesis of Pear Valley began in a vineyard. In the last 1960s, owner Tom Maas was stationed on an army base in Germany in the midst of a vineyard. Here he learned to love both wine and the vineyard. Decades later, after their kids were grown, Tom and his wife, Kathleen, were free to pursue their dream of owning and living in a vineyard. It started with 20 acres in 1999 and the Maas' now own 113 acres planted to premium French, Italian, Spanish and Portuguese varieties. In August 2012, they achieved Sustainability in Practice (SIP) Vineyard Certification, and all 5,500 cases produced each year are made solely from varietals grown on their estate vineyards. In Spring 2008, the Maas began the next phase of their dream when they broke ground on a 14,000 square foot winery and 5,000 square foot tasting room. Continuing their commitment to providing the best environment possible, both buildings were designed with PG&Es Savings By Design program, which ensured energy efficiency and environmentally sound grounds. Pear Valley is able to offer a well-rounded menu where tasters can choose to try six of the 24 varietals. There is something here for everyone from refreshing Sauvignon Blanc and Chardonnay, to approachable Cabernet Franc, Zinfandel and Syrah, along with some dessert wines (Muscat, Orange Muscat and a Port-style Solera). Their flagship wine, Distraction, is a must-try blend of the best Petite Verdot and Malbec. Our philosophy is to grow the best fruit possible and then interfere as little as possible, said Kathleen. Our goal is to create unique vintages that reflect vibrant fruit nourished by ancient soils under ideal climate conditions while leaving little impact on the environment. Visitors are encouraged to bring a picnic lunch and enjoy it at one of the fifteen picnic tables with beautiful views of the surrounding vineyards. Tours of the estate are offered daily, by appointment, and visitors will often have the opportunity to meet Kathleen in the tasting room and Tom in the vineyards. Pear Valley also hosts a complimentary concert each month featuring a local musician, with Pear Valley wine offered by the glass or bottle. On Friday, March 15, from 5:30 to 8:30 p.m., musician Jody Mulgrew will kick off Paso Robles Zin Fest weekend, and on Saturday and Sunday from 1 to 4 p.m., enjoy complimentary pork sliders made with Pear Valleys Zinfandel, along with tastings of the estate Zinfandel and signature blends Inspiration and Distraction.

Open daily 11:00a.m. to 5:00p.m. 4910 Edna Road, San Luis Obispo www.tolosawinery.com | (805) 782-0500

Tolosa Winery is well known for their delicious Chardonnay & Pinot Noir, their fabulous hospitality center and tasting room, and their wonderfully innovative events. This May 19th, the 4th Annual Cte de Tolosa Velo Challenge is set to take place. While wine and bikes might not be the most traditional pairing, winemaker Larry Brooks finds the two to go hand in hand. Larry Brooks has been making wine with Tolosa for over a decade. The fruits of his labor have earned numerous accolades and awards over the years and Tolosa has become one of the Central Coasts most popular wine tasting rooms for both locals and tourists. The variety and quality of the wine Tolosa produces attracts a wide spectrum of wine lovers from novices to connoisseurs. Equal to his passion for winemaking, Larry covets the time he has with his bike. For the past 30-plus years, Larry has been riding both competitively and leisurely. In fact, his decision to first learn about winemaking can largely be attributed to his love of bikes. The UC Davis graduate program cover was illustrated with a racing bike. Larry took that as a sign and jumped at the chance for a career as a winemaker. Edna Valley, known for its marine climate, rolling hills and beautiful vineyards, is an ideal location for cyclists of all skill levels. Larry, along with Tolosa Winery, is proud to share this experience with folks that may not have the opportunity to ride on this type of terrain. Cte de Tolosa features a rigorous 100km course, which includes both paved and dirt roads, with plenty of climbs and varied ground. The course begins at Tolosa and follows the less traveled path Northeast through the historic town of Santa Margarita, toward Pozo and onto High Mountain Road. The second half of the ride meanders by Lopez Lake and back through the south end of the Edna Valley. Check in time is at 7 a.m. at Tolosa Winery. There will be a finish line lunch served at 1 p.m. Guests, spouses and friends of any rider are welcome to join the lunch for a nominal fee. Trophies will be awarded to qualified riders. The actual ride is limited to 100 riders and the proceeds from ticket sales are donated to the SLO County Bicycle Coalition in celebration of SLO Bike Month. The Coalitions mission is to improve the quality of life in SLO County through bicycle advocacy, education and inspiration. To see a venture between the wine country and the coalition makes perfect sense and can only improve the relations between wineries and cyclists. These two California essential activities make SLO one of the happiest places on earth. To learn more about the race and Tolosa Winery, visit www.tolosawinery.com.

Zotovich Cellars

( zh - Th - vich )

In the north-west corner of the Lompoc Wine Ghetto sits Zotovich Cellars, a 1,200-case winery, the budding project of Steve Zotovich and his nephew, Ryan Zotovich. Their partnership in Zotovich Cellars is new, but their shared passion for well-crafted wine and winemaking is not. In 2004, Steve purchased a vineyard along Route 246 the epicenter of premier wine grape growing in Santa Barbara County. Ryan obtained a degree in wine and viticulture from Cal Poly San Luis Obispo and began winemaking under Steve Clifton, of Palmina and Brewer-Clifton. Steve Clifton coached Ryan on the importance of minimal interventionism in winemaking, as Ryan pursued hands-on experience at Palmina, and then later, under the direction of Kris Curran and Victor Gallegos at Sea Smoke. In the summer of 2010, Ryan left his position as Sea Smokes Cellar Master to dedicate his energy and winemaking efforts into the newly formed family label, Zotovich Cellars. The partnership just made sense, says Ryan. Our goal is to remain small. We never want to lose our focus of making highquality wine. Stylistically, our wines are varietally driven, elegant, balanced and bright. We rely heavily on the grapes themselves to set precedent. You can purchase bottles of these handcrafted, small-lot wines at the Zotovich Cellars tasting room in the Lompoc Wine Ghetto every Thursday through Sunday from 10 a.m. to 5 p.m. Zotovich Cellars has recently moved production into a new facility in Lompoc on 12th street, near the Lompoc Wine Ghetto. With harvest right around the corner the team at Zotovich Cellars is excited for the opportunity to work with their estate fruit in the new winery! During harvest feel free to ask for a tour and, if theyre not too busy working with fruit, they would be happy to show you around! Also, mention this article and receive a two for one tasting!

5th Annual Wine 4 Paws Takes Place April 13-14

fundraiser for Humane Society
Wine drinkers, mark your calendars! Wine 4 Paws is proud to announce dates for our Fifth Annual event, to be held at wineries throughout the Central Coast April 13 & 14. Wine 4 Paws is a weekend when the Central Coast wineries join together and share their proceeds with Woods Humane Society in San Luis Obispo. It combines two things many of us love wine and animals! More importantly, it benefits the homeless animals at Woods who await their forever home, enabling Woods to continue to provide a high level of care to their guests. Wine 4 Paws is held concurrently at the participating wineries April 13-14, and with wineries from Santa Maria to San Miguel sharing in the event, youve got plenty to choose from. Visit www.wine4paws.com for a complete list of participating wineries. Contact info@wine4paws.com for more info on the event. Wine 4 Paws began in 2009 as a way to help raise money for Woods Humane Society while promoting the Central Coast Wine Region. By 2012 the event had 70 wineries participating, and raised just shy of $35,000! Overall, Wine 4 Paws has raised over $80,000 for Woods. Director Sarah Tomasetti said, Each year we are thrilled with how much enthusiasm we see around the event, by the wineries and the wine drinkers. Weve got some loyal followers who come out ever year locals as well as out-of-towners. Its become an amazing event and we are so thankful to have such supportive wineries and wine drinkers! The event includes a free map with passport available to print from the Wine 4 Paws website, or grab one at any participating winery during the event. When you visit a winery and help generate a donation get your passport stamped, and once its got 4 stamps youll be entered in the Wine 4 Paws Raffle. You need to plan a wine tasting weekend anyway, so why not do it

when your money will go to a good cause? To see the full list of participating wineries and a get a free printable map & passport, go to www.wine4paws.com. Then head out to the wineries of your choice during the weekend of April 13-14. A portion of your sale or your full tasting fee will be donated to Woods Humane Society on behalf of the wineries! For the second year running, Cloud Star Natural Pet Products is on board as the main sponsor. Thanks to Cloud Star, every penny raised will go directly to Woods! Woods Humane Society, Inc. is a locally owned private non-profit animal welfare organization that has served homeless companion animals since 1955. The shelter, located off of Hwy 1 and Kansas in San Luis Obispo opened its doors in August of 2005 and has been going and growing strong ever since. Aside from the hundreds of animals Woods cares for each year, the organization maintains partnerships with other local private and county operated animal shelters in an effort to provide the greatest amount of good for the greatest amount of animals. Woods Humane Society is also the only animal shelter on the central coast with a fully operational spay & neuter suite, which opened in September of 2006 and has performed over 15,000 surgeries. Their goal is to provide a premier level of care for all of the animals entering their doors. As the needs of the county grows, so too does the cost to operate their facility. They are experiencing a 20% growth in all aspects of the shelter on an annual basis. Woods can rise to meet the needs of our local homeless animal population, but cannot do this without the support of our community. They are solely funded through charitable gifts from the community and the need is greater than ever for ongoing financial support. For additional information please contact Sarah Tomasetti, Director of Wine 4 Paws at info@wine4paws.com.

Sort This Out Cellars Going Retro is Always Cool

BY MICHAEL CERVIN

Going Retro is always cool; recalling the best of past days and summoning a very present energy. Every winery wants to stand out and for Sort This Out Cellars, even their name tells you this is going to be a different experience. Co-owner Michael Cobb may have set his tasting room in the popular Danish village of Solvang, but this aint no storybook winery. Clearly there is a diversity of wine at Sort This Out, from Merlot to Syrah to Viognier and Cabernet Sauvignon. And the concept is also different in that Cobb does not own vineyards; he instead sources the best fruit from the best vineyards he can find. Sort This Out has created an homage to Las Vegas, a pin-up 1950s

era sensibility which is seen on many of their playful labels. The tasting room is decked out in chrome and red leather, a fun, funky, hip place to be with its low-back shiny chrome bar stools at the tasting counter. In the back room red walls and leather couches make this a comfy hangout. They offer live music Friday and Saturday nights. It has low-back shiny chrome and red bar stools at the tasting counter, and there is a back room as well with red walls and leather couch. Sort This Out Cellars is located at 1636 Copenhagen Drive in Solvang, and theyre open from 10 a.m. to 7 p.m. Sunday through Thursday, 10 a.m. to 10 p.m. on Friday and Saturday. Contact them at (805) 688-1717 or www.sortthisoutcellars.com

LOS OLIVOS
Dragonette Cellars
New Releases - 2011 Sta Rita Hills and Radian vineyard Pinot Noirs and 2011 Sauvignon Blanc vogelzang vineyard
spends 16 months in barrel in order to fully integrate its amazingly complex flavors and aromas. This largely oak aged, reserve level wine is a singular expression of Sauvignon Blanc, made in tiny quantities, and will also disappear fast (as did the 2009; there was no 2010). Now that the wine club has had its first shot at these wines, we can release them all to the wider public. Place your orders quickly; we dont want anyone disappointed. December and January have brought with them several (always needed) rainstorms and cold frosty mornings often in the 20s. The vines are completely dormant at this point, and we will soon start pruning back last years growth and preparing the vines for (hopefully) another excellent growing season. As is typical this time of year, the icy mornings are accompanied by absolutely brilliant sunshine, bathing the freshly green hills and mountains in glorious yellow light, against a backdrop of piercing blue skies. With a cold storm or two, we can also see snow covering the Los Padres Mountains to the north and occasionally even the San Marcos Pass to the east. With any luck, the sunshine will warm us up into the upper 60s or 70s and we will feel as if we have stolen a few hours of springtime. We love the crisp beauty of this time of year, which really is a perfect time to visit, away from the crowds and heat of the summer. In the cellar, we have been busy crafting several new wines, which are now safely in bottle and ready to hit the streets. In particular, we are thrilled at the return of the Sta. Rita Hills Pinot Noir, our complex, energetic blend of wines from several renowned vineyards. We sold out of the 2010 Sta Rita Hills in record time, and it feels great to finally have the 2011 in stock. Additionally, we are extremely excited about a tiny production (48 cases!), single vineyard Pinot Noir from the extreme, hauntingly dramatic Radian Vineyard at the far western edge of the Santa Rita Hills. This high toned, spicy, earthy, concentrated wine is sure to disappear in a matter of weeks, so you will have to act fast to obtain some. Finally, there is the new release of the 2011 Sauvignion Blanc, Vogelzang Vineyard, which

2011 Pinot Noir, Sta. Rita Hills - $44

This wine is a blend of top sites in the Sta. Rita Hills appellation, where foggy mornings give way to windy afternoons with brilliant sunshine, perfect for Pinot Noir. This wine is composed of grapes from several noteworthy vineyards including the renowned Hilliard Bruce and Fiddlestix vineyards, the dramatic, steep and windswept slopes of John Sebastiano Vineyard which provide complexity from several different clones in several distinct microclimates, the brilliant Zotovich and La Rinconada vineyards and the fascinating new Pence vineyard. Each site is chosen to add complexity to the final blend, and is individually harvested after meticulous vineyard sampling and analysis. The grapes are hand harvested and sorted in the vineyard in the cold early mornings, destemmed without crushing (sometimes with partial whole clusters), given a 4-7 day cold soak, carefully fermented (native yeast where possible), drained and pressed straight to barrel. After 15 months aging in barrel, without racking, the wine is painstakingly blended for complexity and balance and then bottled without filtration.

2011 Pinot Noir Radian vineyard - $54
Radian vineyard is located at the far western edge of the Sta. Rita Hills on dramatically steep slopes with large amounts of diatomaceous earth in the soil. This extreme site is regularly buffeted by high winds, cooling the vineyard and robbing it of moisture. The vines here struggle to set fruit, and only a tiny crop of small clusters are able to ripen. In 2011 the average yield was no more than .4 tons per acre, making the wine scarce. The cold site produces wines that are lean and intense, with a fascinating mineral streak and a remarkable depth of flavor even at low alcohol levels. This wine was aged in two neutral French oak barrels and promises to improve for several years.

2011 Sauvignon Blanc, vogelzang vineyard - $48

As you all know, we believe that Sauvignon Blanc is one of the great white wine grapes of the world, and we aim to produce reference point wines from this varietal. Vogelzang in the Happy Canyon area of the Santa Ynez Valley, is particularly well suited to growing this noble grape. Happy Canyons unique soils and climate - warm to hot summer daytime high temperatures and cool to cold evening lows create wines demonstrating riper spectrum fruit flavors balanced by vibrant refreshing acidity. We purchase Vogelzang fruit by the acre, permitting us to control the farming practices, limit yields, manage the canopy and harvest in selective picks. We feel Vogelzang fruit is particularly well suited to barrel fermentation and longer aging, and we aged this wine for 16 month in 80% French oak barrels (25% new) and 20% stainless steel barrels. Bottled unfiltered. Extremely Limited. Only 150 cases produced.

Cinque Stelle Winery - A Rising Star
BY CAROLYN WOODDALL

Cinque Stelle Winery and Boutique is a rising star on the Santa Ynez Valley winery scene, not only because their name means five stars in Italian. Owned and operated by the Crist family, each star represents a member of the family, and together they create small-production wines that reflect a shared passion and attention to quality from the farming to the winemaking process. The Crist family began their journey by purchasing a vineyard in Santa Ynez Valley (off Refugio Road) in 2007, where they grew and sold Albarino, Pinot Grigio, Tempranillo and Syrah to local wineries such as Brander, Longoria and Tensley. Then in 2009 winemaker Matthew Crist had the opportunity to be mentored by local winemakers, which led to the first vintage of Cinque Stelles estateproduced wine. The cooler microclimate and rocky terrain along with

hand-farming the entire vineyard, enables the Crist family to produce high-quality fruit that creates varietal wines with unique flavor profiles. Make sure to check out their flagship wine, Albarino, which is a very rare Spanish varietal. When the Crist family decided to open their tasting room in August 2012, Natalie and Barb (daughter and mother) incorporated a lovely womens boutique that features clothing, fine gifts, jewelry and gourmet food items for pairing with their wines. Whether tasting one of their unique wines or browsing for a one-of-a-kind gift, Cinque Stelles comfortable setting and European-chic atmosphere will make you feel right at home. Cinque Stelle Winery and Boutique is located at 2445 Alamo Pintado Avenue, Suite 102 in Los Olivos. Coghlan Vineyards & Jewelers

BY CAROLYN WOODDALL

Coghlan Vineyards & Jewelers was born of owners Eric and Samantha Coghlans mutual passion to celebrate and share Earths natural beauty. They met as Graduate Jeweler Gemologists at the G.I.A. Institute, and after an anniversary wine tasting trip to Santa Ynez, they fell in love with the area and purchased their vineyard in 2009. The Coghlans shared love for cultivating the earth for its hidden treasures translated perfectly to the art of winemaking. They proudly practice organic farming techniques on their beautiful vineyard, which is planted to Cabernet Sauvignon, Cabernet Franc, Malbec, Grenache and Petit Verdot, and source exceptional Pinot Noir grapes from acclaimed local vineyards. Their dream of opening their own jewelry store quickly became entwined with opening their own tasting room, a dream whose realization was aided by finding the beautiful historic Victorian home in downtown Los Olivos. Visitors to the unique and colorful tasting room can experience both art formshighly rated Coghlan wines and original jewelry pieces. The back patio will reveal a picturesque backyard replete with comfortable patio furniture and a bocce ball court to encourage you to stay a while and enjoy sharing the Coghlans dream and quiet wine

country charm, while the tasting room is warm and inviting with vibrant pictures of the Coghlan Vineyard. The tasting bar itself is a work of art, offering displays of their distinctive jewelry pieces, customers can even work with them to create customized jewelry pieces. Bedford Winery
For the adventurous that seek the uncommon and are captivated by character, go to Bedford Winery in Los Alamos. Along with barrel fermented Chardonnays and signature Syrahs, there are also surprises. One may discover lesser known varietals such as Mourvdre, Cabernet Franc or dry Riesling. You might taste a wellaged library selection. After more than 30 years in the field, winemaker Stephan Bedford is still full of enthusiasm. He enjoys the hands-on mechanics of winemaking. Using time-honored techniques, he creates wines with personality and depth. Eclectic, off-beat and forgotten varietals fuel his passion and creativity. His limited edition wines are available primarily at the tasting room, which is open daily from 11 am to 5 pm, sometimes longer depending on the season. The tasting rooms rustic ambience invites you to focus in on the wines and encourages dialog on a variety of topics with the well-read Bedford staff. A generous garden courtyard is well suited for a relaxed picnic. This is what wine tasting should be: wines that are not main stream, an unrushed, intimate atmosphere and great conversation. Bedford Winery is also known for out of the ordinary events. From Mushrooms Gone Wild and historical readings with era specific food, to original theatrical presentations by the talented Bedford Players; plan on enlightened stimulation, smiling and thinking while sipping Bedford wine. Take the path less traveled and visit tiny downtown Los Alamos. This quirky but friendly town harkens back to a bygone era, and now its attracting maverick business owners and artists. It offers the perfect laid back setting to enjoy your ultimate wine experience.

The Conway family is actively involved in their winery business. With two different labels covering the best of the California Central Coast, Conway Family Wines might just become your familys wines. They offer two labels to choose from including Deep Sea wines which are made from grapes grown in Californias moderate coastal climates including offerings of Chardonnay, Viognier and Sauvignon Blanc to Syrah and Pinot Noir. Vineyards along Californias coastline are cooled by fog and ocean breezes which translate to distinctively different grapes from those grown in warmer interior areas. Its the job of the Conway winemaker to preserve these differences so the wines reflect their oceanic terroir.
