Objective Molecular Gastronomy has been introduced at the end of


the 1980’s, as a specific part of food science devoted to
home or restaurant culinary transformations. This
scientific discipline is studying cooking from the chemical
and physical point of view.
After decades of interest, it would be useful to present
some results of investigations, as well as informations
taken from food chemistry and food physics, as applied to
this activity (cooking) done by millions of people in the
world.
In particular, it is very important to show to a large
audience how cooking is mainly (for the technical part,
not the artistic part) chemistry and physics, as this would
be the base of a better acceptance of science in daily life,
and in food in particular.

It is decided that the TG prepares for IUPAC (Division 7 :


chemistry and human health) a series of papers on
Molecular Gastronomy.
These papers should be published in a special issue of
IUPAC Journal, and also under the form of books. A site
could be added for popularization of the material.
The first document, on Molecular Gastronomy (only the
scientific phenomena of culinary transformations –home
or restaurants, the industrial point of view should not be
considered), could be followed by other books, on :
- Cooking and metabolism (including accessibility
of nutriments…)
- Cooking and health (including polyphenols,
endocrine modifyers from food…)
- Cooking and culture
These others publications would be part of other projects
proposed to IUPAC.

number of Polyethylene (PE) test samples with regard to
their composition using a given experimental procedure,
(2) to compare the quantity and chemical composition of
the obtained fractions in the partner laboratories, (3) to
compare the results with regard to influence of the
instrumental setup and reproducibility and (4) to establish
suitable conditions for the compositional fractionation of
polyethylene. Finally conclusions shall be drawn with
regard to the comparability of the results and the

Objective Standardization of the experimental conditions for the HT-
SEC analysis of polyolefins. The particular emphasis shall
be on the sample preparation with regard to dissolution
temperature and time, the sample measurement with
regard to column temperature and the column set, and
with regard to the detection technique (RI, ELSD, Visco,
LS). Although there is an ASTM method for the analysis
of polyolefins by HT-SEC (ASTM D 6474), procedures
for sample preparation are not addressed adequately. The
application of different detectors in HT-GPC is not
addressed at all.

Objective To develop a guide for selection and use of
proficiency testing schemes for limited number of
participants (chemical analytical laboratories).
The International Harmonised Protocol for the
Proficiency Testing of (Chemical) Analytical
Laboratories adopted by IUPAC in 1993 has been
revised now [outcome of IUPAC project 2001-009-1-
500]. The ISO/DIS 13528 (provisional version)
“Statistical Methods for Use in Proficiency Testing
by Interlaboratory Comparisons” is under
development as complementary standard to ISO/IEC
Guide 43 “Proficiency Testing by Interlaboratory
Comparisons”. However, all these documents are
mostly oriented on proficiency testing schemes for a
relatively large number of laboratories-participants
(20 and more). The problem may arise when
proficiency testing scheme is to be organized –
selected and used - for a limited number of
participants (less than 20), for analysis of analytes
specific for a local region, or for an industry under
development, or for analysis of non-stable analytes
and similar.
It is appropriate now for the IUPAC WP QA to
undertake a development of such guide in addition to

conditions for poly(ethylene glycol) using a given

compare the results with regard to accuracy and
reproducibility. Finally, conclusions shall be withdrawn
