No-Bake Cookies
We grew up with Chocolate Haystacks and Rice Krispie Treats. Beyond that, we never paid much attention to no-bake cookies. Then when we stared taking our kids camping, we started looking for cookies that we could make at camp. That led us to revisit nobake cookies. That was along time ago. Back then, we thought of no-bake cookies as kid cookies. Over the years, we experimented and tried new recipes and have made no-bake cookies that are definitely adult and good enough to serve to guests. No adult will to turn down White Chocolate Chip Cranberry Bar Cookies, a grown up version of Rice Krispie Treats. But of course, youll find no-bake cookies here that the kids will clamor for. We think you will enjoy these cookies. Theyre great cookies, not just great no-bake cookies.

Save Time with No-Bake Cookies


Whether you don't want to heat up the kitchen or the demands of getting the kids out the door are upon you, it's nice to have a few no-bake cookie recipes on hand. We thought we would share some of our favorites with you.

Types of No-Bake Cookies


There are three types of no-bake cookies: those that require no cooking, those that are cooked in the microwave, and those that are cooked on the stovetop. Generally, we prefer the latter. Some no-bake cookies require refrigeration or may become soft if left in a picnic basket or school lunch. That doesnt make them bad cookies; you just need to consider the circumstances when choosing a recipe. In addition to cookies that may become soft, fragile cookies may not work well in your childs lunch bag. Kids love to help make cookies. Many no-bake cookies are very simple and quick fitting your childs attention span. Not only is there no chance for your child to burn himself or herself, but your child doesnt have to wait for the cookies to come out of the oven to see the reward. Kids of all ages love fresh cookies. We used to take scout and youth groups hiking in the mountains. We would bag up the ingredients for a batch of no-bake cookies. For a mid-trail break, we would stop and make up a batch of cookies.

No-Bake Cookie Recipes


No-Bake Cookies: Bars
Cranberry Coconut Bars
Cranberry Coconut Bars are more of a big kid cookieit has too much fruit and too many nuts in it to suit most youngsters. But it so scrumptious and easy, we had to include it. If you are making a lunch for a spouse or a teenager, we think this will be a hit. Of course, it doesn't have to go in a lunch pail. This is a microwave cookie that can be mixed right in the baking pan. How's that for convenience? If you are not fond of dried cranberries, consider substituting dates, raisins, or chopped apricot pieces in this recipe. Ingredients 1/2 cup butter 1/2 cup brown sugar 1 1/2 cup quick rolled oats 1/4 cup light corn syrup 1/2 cup dried cranberries 1/2 cup sweetened flaked coconut 1/2 cup walnut pieces Directions
1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until

the butter is melted.


2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press

the mixture firmly into the dish.


3. Microwave for three to five minutes or until lightly browned. If your microwave

does not have a rotating carousel, rotate the dish twice during cooking. 4. Let the cookies cool and then cut them into bars with a sharp knife. Wrap them individually to pack in a lunch. This recipe will make sixteen 2 x 2-inch squares.

Rocky Road Bars


Dad, anything with marshmallows and chocolate has to be good. Katie was right; they are good. These interesting cookies are almost like candy barsa chewy confection with nuts and chocolate. These are very quick cookies. With all the ingredients on the counter, it took us eight minutes to pop these cookies in the microwave. We made several batches, tinkering with them to get them just right. Everyone declared them very good. Ingredients 1/2 cup butter 1/2 cup brown sugar 1 1/2 cup quick rolled oats 1/4 cup light corn syrup 1/2 cup dried semi-sweet chocolate chips 2/3 cup miniature marshmallows 1/2 cup walnut pieces Directions
1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until

the butter is melted. 2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press the mixture firmly into the dish. 3. Microwave for three to five minutes or until lightly browned. If your microwave does not have a rotating carousel, rotate the dish twice during cooking. 4. Let the cookies cool and then cut them into bars with a sturdy knife. Wrap them individually to pack in a lunch. This recipe will make sixteen 2 x 2-inch squares. Bakers note: Since microwave ovens vary significantly, you may need to experiment with cooking times. In our test microwave, four minutes was just right. Three minutes left them a little on the sticky sidebut still goodand five minutes made them too chewy.

No-Bake Cookies: Drop Cookies


Chocolate Peanut Butter Drops
This recipe makes a great kid cookie. It's almost confection-like but is so packed with energy and hearty oats that you won't mind giving your youngster a few. This cookie is best with a tall glass of milk. This is a range-top cookie. Because it is a nobaker and so full of energy, it makes a great camping cookie. Ingredients 2 cups sugar 1/2 cup milk 1/4 cup butter 1/3 cocoa 2 1/2 cup quick oats 1/2 cup peanut butter 1/2 tablespoon vanilla extract Directions
1. Combine sugar, milk, butter, and cocoa in a medium saucepan. Cook over

medium heat, stirring occasionally, until the mixture comes to a boil. Cook for two more minutes stirring constantly and then remove the pan from the heat. 2. Stir in the peanut butter and vanilla, then the oats. 3. Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the cookies cool completely before removing them from the waxed paper. Editors note: Patty from San Francisco made these and reported excellent results. She added nuts to the recipe. Another baker, Peggy, reported adding miniature marshmallows successfully.

Chocolate Chip Oat No-Bake Cookies


This is one of those cookies that you make on the stovetop but it is quick and easy cookie. We made ours in less than ten minutes from assembled ingredients to cookies on the sheet. Everyone likes a chocolate chip cookie. They oats make it a chewy chocolate chip cookie. Its a wholesome cookie that you wont mind including in your childs lunch box. If you like chewy chocolate chip cookies, try these. Ingredients 1 cup brown sugar 1/4 cup butter 1/3 cup evaporated milk 1/4 cup peanut butter 1 cup quick rolled oats 1/2 teaspoon vanilla extract 1/2 cup chopped salted peanuts 1 cup milk chocolate chips Directions 1. In a saucepan, cook the brown sugar, evaporated milk, and butter to a heavy saucepan. Cook over medium heat, stirring continually, until the mixture comes to boil. Cook for one minute longer. 2. Remove from heat, stir in peanut butter, quick oats, and vanilla. Let cool until just warm to the touch then stir in the peanuts and chocolate chips, stirring just until the chips and peanuts are dispersed. 3. Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator. Bakers note: If you stir the chocolate chips in before they have sufficiently cooled, they will melt. Thats not bad but you will have chocolate cookies instead of chocolate chip cookies.

No-Bake Cookies: Rolled


Snow Topped Mountains
Those must be baked cookies. Actually, they are baked in the microwave but you cream the sugar and butter together just as if you were going to bake them in the oven. Ingredients 1 3/4 cups all-purpose flour 1/2 cup cocoa dash of salt 3/4 cup butter 3/4 cup brown sugar 1/2 teaspoon vanilla 1 cup walnuts 2-3 tablespoons water powdered sugar for dusting Directions
1. Mix the flour, cocoa, and salt together in a medium bowl/ 2. Cream the butter and brown sugar together. Add the vanilla. Add the dry

ingredients about one-third at a time. Add the nuts.


3. Unless the butter has become too soft, the mixture will still be dry and granular.

Add cold water one tablespoon at time beating after each addition, until the mixture begins to clump together. Do not add more water than needed. Form walnut-sized balls. As you form the balls, the dough should come together in a soft, clay-like consistency. 4. Place the eight or ten balls on waxed paper placed on top of the carousel in the microwave. Bake at high heat for about three or four minutes or until firm. Remove the waxed paper from the microwave to a wire rack. Let the cookies cool for four or five minutes and then remove them from the waxed paper. Dust the tops with powdered sugar. Bakers note: Since microwave ovens vary significantly, you may need to experiment with cooking times. In our test microwave, 3 1/2 minutes was just right. At three minutes the starch was not quite cooked enough and at four minutes, they were just a little hard. Tip: Use a fine-mesh sieve to get a light, even dusting of powdered sugar on the cookies. Hold the sieve over the cookies and drop a spoonful of powdered sugar in the sieve. Shake or tap the sieve to create a fine flow of sugar.

Tropical Orange and Coconut Balls


If you love the buttery sweet texture of pecan sandies, try these! These are sweet, tender cookies made with pecans and just a touch of orange. They both taste and look great. Don't be afraid to bring these to the next party. Everyone will be surprised to hear that these are no-bake cookies. Ingredients 3 1/2 cups vanilla wafer cookie crumbs 2 cups powdered sugar 1 1/2 cups pecans, chopped 1/3 cup frozen orange juice concentrate, thawed, undiluted 1/2 cup butter, melted 1 1/2 cups sweetened flaked coconut Directions 1. In the mixing bowl of your stand-type mixer, combine the cookie crumbs, powdered sugar, and chopped pecans. Mix in the orange juice and melted butter. Mix for 1 to 2 minutes. 2. Shape into one-inch balls and roll in the coconut. 3. Place the cookies in the refrigerator to become firm.

Peanut Butter No-Bake Cookie Recipe


This is a chewy, peanut butter-rich cookie made with oats. Both kids and adults will like this. Again, this is a stovetop recipe. From ingredients to cookies on the sheet took us about ten minutes. Ingredients 2 cups brown sugar 1/2 cup evaporated milk 1/2 cup butter 1/2 teaspoon vanilla extract 1 cups peanut butter 3 cups quick rolled oats Directions 1. Add the brown sugar, evaporated milk, and butter to a heavy saucepan. Cook over medium-high heat, stirring continually, until the mixture comes to boil. Cook for one minute longer. 2. Remove from heat, stir in peanut butter, quick oats, and vanilla. Stir until the mixture begins to cool. 3. Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator.

How to Make Buckeyes


Buckeyes are fun little candies. They are made with a simple, fudge-like peanut butter center and dipped in chocolate. The top of the peanut butter ball is left uncovered making it look like a buckeye. (A buckeye is a tree that forms a little round fruit with nut like seeds.) Ingredients 1 cup peanut butter 1/4 cup butter 1 1/2 cups powdered sugar 6 ounces of dark chocolate wafers or other coating chocolate Directions
1. Mix the peanut butter, butter, and sugar together adding more powdered sugar if

necessary to reach the desired consistency. Form little round balls the size of a large marble. Refrigerate the balls until firm. 2. Melt the chocolate. Dip the peanut butter balls in the chocolate using toothpicks as skewers to hold the balls. Cover all but the top portion of the balls. Set aside until the chocolate sets. Store leftover buckeyes in the refrigerator. Bakers note: This recipe was tested with 100% peanut butter, the kind that needs to be refrigerated after opening. If you use shelf stable peanut butter, the buckeyes may not need to be refrigerated. We prefer the 100% peanut butter.

No-Bake Cookies: Rice Krispes Treats


Some time ago, we took a week and experimented with all kinds of Rice Krispie Treats. (Did you know that you can add a jar of jam for fruity treats?) We still have our favorites. White Chocolate Rice Krispie Treats are one of our favorites.

Original Rice Krispies Treats Recipe


The following recipe is based on Kelloggs original Rice Krispies Treats recipe. We prefer this with vanilla extract which wasnt in the original recipe. Ingredients 4 tablespoons (1/2 stick) butter 4 cups miniature marshmallows 1 teaspoon vanilla extract (optional) 6 cups Kelloggs Rice Krispies cereal or equal Directions Butter a 9 x 13-inch baking pan. 1. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is melted and smooth. Add the optional vanilla. 2. Add the rice cereal. Stir until the cereal is uniformly combined with the marshmallow mixture. 3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares. Bakers notes: If you use a large enough pan, you can mix the treats right in the pan, not in a bowl. The hot pan makes it a little easier to stir the mixture together and there is less clean-up. Rice Krispies Treats are best eaten the same day.

Grandma Maloneys Peanut Butter Rice Krispies Treats Recipe


This is a recipe that uses corn syrup, not marshmallows. Grandma Maloney would bring these to family parties where they are quickly consumed. Ingredients 1 cup granulated sugar 1 cup corn syrup 1 1/2 cups peanut butter 5 cups Kelloggs Rice Krispies cereal or equal Directions Butter a 9 x 13-inch baking pan. 1. In a large pan on the stovetop, bring the corn syrup and sugar to a boil. Stir in the peanut butter. 2. Add the rice cereal. Stir until the cereal is uniformly combined with the candy mixture. 3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares. Bakers notes: Rice Krispies Treats are best eaten the same day.

Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares. Cranberry White Chocolate Rice Krispies Treats Recipe


This is simply Rice Krispies Treats with added white chocolate chips and dry cranberries. The white chocolate melts into the marshmallow mixture and makes for a much richer and very attractive bar. This is very suitable for guests. It is nearly as simple as the original recipe. Look for white chocolate chips made with cocoa butter instead of vegetable or coconut oil. Ingredients 4 tablespoons butter 4 cups miniature marshmallows 1/2 tablespoon good quality vanilla 1 1/2 cup white chocolate chips 6 cups Kelloggs Rice Krispies cereal or equal 3/4 cup dry cranberries Directions Butter a 9 x 13-inch baking pan. 1. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is melted, hot, and smooth. Add the vanilla. 2. Add the white chocolate chips, rice cereal, and cranberries. Stir until the cereal is uniformly combined with the marshmallow mixture. 3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares. Strawberry Jam Rice Krispies Treats Recipe


Once you have made these treats with jam, youll never go back to the plain variety. The jam adds sweetness and flavor to the cereal. (At one cup, its fairly subtle but we thought, just right.) Of course, you can use jams other than strawberry. Ingredients 4 tablespoons butter 4 cups miniature marshmallows 1 cup strawberry jam 6 cups Kelloggs Rice Krispies cereal or equal Directions Butter a 9 x 13-inch baking pan. 1. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is melted and smooth. Add the jam and stir. 2. Add the rice cereal. Stir until the cereal is uniformly combined with the marshmallow mixture. 3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares.
