Beer Apple Cinnamon Roles (with no eggs)

Time to prepare 12-24 hours By Ibrahim Sial June 3, 2012

Wets
- 1 cup warm Beer of choice (the darker the beer the more beer avor will be in the end roles) - 3-4 Tbs melted butter - 2 Tbs sugar - 1 packet of active dry yeast (2 1/2 tsp?)

Drys
- 2 Tbs and 1/2 tsp salt - 2 cups of all propose our

Making the Mother


Make sure all ingredients are warm. In large bowl combine Wet stu and let the Yeast come to life (that is foam up) about 10 minutes. Mix Dry stu and then add to the foaming Wet stu. Once mixed let mix rest for a while. *(this is what I did, but my gut is telling me that once you have the mother mixed it needs to rest and not go crazy, so) Cover with plastic wrap or foil and set in fridge and let sit overnight. Set out - 2 stick of butter to soften

Next Day
Remove resting mother from fridge and let come to room temp while you prepare lling and warm our (about 2 1/2 cups). Add one soft stick of butter to the mother and mix in till smooth. Then add 1/2 cup our at a time and mix with wooden spoon till the mother becomes dough 1 to 1 and 1/2 cups four. Turn out on a well oured surface and kneed dough till it is smooth and sticky but not sticking to your hands or the table. This is the most important step, keep the bough sticky but the butter will help you kneed the dough, which you should do for 10-15 minutes. Butter large bowl with the wrapper from the butter you saved and did not toss away yet, and set dough in the butter bowl, cover and set aside to rise in a warm place till doubles in size. About 45-70 min. During the wait prepare the lling

Filling
Slice and/or dice, one sour apple(Granny Smith or some such), keep skin on if you want it (I like it), otherwise peel the apple. Toss apple with lemon juice and set in fridge. Mix in bowl - 1-2 cups sugar, 50- 2 Tbs Cinnamon - 1/8 tsp fresh Nutmeg, 1/4 tsp pre-ground 1

Set bowl aside

Make Your Roles!


Once dough is ready, role it out into a rectangle about 14/16 inches and 1/4 inch thick. Spread 1 stick soft butter over the dough leaving a strip of bough 1/2 inch wide on the long side (this will be used to seal the roles closed and should remain free of lling). Next take handfuls of cinnamon-sugar mix and spread it evenly over the butter, then spread the apple evenly over the sugar. Role the dough starting opposite the uncovered strip. When the role reaches the uncovered strip, wet it with water and seal the roles shut. Using dental oss method, or knife, cut the roll into six roles and arrange in buttered pan. Set aside to rise once more in a warm place for 20-40 minutes, and preheat oven to 350 F. Let them get as wide as you like or until the roles double in size. Then bake for 35-45 minutes, until tops are browned and center of dough role is still soft.

Make frosting of choice.
