Uncle Gino’s Recipe


Clam Chowder
INGREDIENTS
3 small cans minced clams
1 can garbanzo beans, rinsed
well
1 potato peeled and cut into
quarters
2 garlic cloves finely chopped
½ stick butter
3 Tbs. extra virgin olive oil
½ c. finely chopped fresh
parsley
½ glass sweet white wine
4 c. chicken broth
½ pt. heavy cream
1 tsp. salt

PREPARATION:
I a medium size pot, on medium heat, add chicken broth together with potatoes and garbanzo
beans. Cook for 10 minutes with pot covered.
Meanwhile, in a medium size frying pan, on medium heat, add butter and olive oil.
As soon as the butter starts melting, add garlic and minced clams. Stir and cook for 2 minutes.
Add wine and cook for another minute. Remove frying pan from the stove and set aside.
With a slotted ladle, remove potatoes and beans from the pot. Blend in a food processor until
achieving a very dense puree. Pour contents back into the pot together with the contents fro
the frying pan. Stir well, add salt and pepper to taste. Add cream and parsley. Stir and cook for
another 2 minutes. Serve hot.

Corned Beef with Cabbage (Dream of the Irish)


INGREDIENTS:
1 piece of 4lb. fresh conred beef
4 Q. water
2 Tbs. white vinegar
1 Tbs. sea salt
(place the following herbs into
a pouch securely tied)
1 tsp. fresh rosemary leaves
5 fresh leave of sage
3 bay leaves
½ tsp. peppercorns
5 whole cloves
1 tsp. fresh thyme leaves
2 medium size cabbages (use
green leaves only)
1 lb. salt port cut into ¼” slices
2 medium size sweet onions
cut into thin slices
1 large potato peeled
4 Tbs. extra virgin olive oil

PREPARATION:
Place water in a large stainless steel pot on medium high heat,. When boiling, add salt and
vinegar together with corned beef. Cook for 30 minutes. At this point, with a perforated ladle,
remove the foam and fatty parts coming up to the surface, then add the herbs in the pouch.
Cover the pot and cook for another 60 minutes.
Meanwhile, fill a medium size pot with 2/3 water and place on medium high heat. When
boiling, add leaves only (no stems) from both cabbages. Cover the pot and cook for 3-5
minutes. Remove pot from the stove and run under cold running water. Place the leaves over
kitchen towels to dry. Folding two or three leaves, cross cut them into small strips. Repeat this
process to the last leaf and set aside.
In a large heavy frying pan on medium high heat, add olive oil and salt pork. Soon as the
contents are getting hot, add cabbage, stir and cook for 15 minutes. Using tongs, remove the
cabbage to a platter. Immediately add onions to the frying pan. Stir until they are lightly
browned. At this point, return the cabbage to the frying pan. Mix well. Using a cheese grater,
grate all the raw potato over the cabbage and onion mixture and add one cup of broth from the
cooking pot. Mix and cook for another 5 minutes.
Remove frying pan from the stove, discard salt port and set aside. As soon as the beef is
well cooked, remove the pot from the stove and place the beef flat down over a cutting board.
Let it set to cool. Remove all the fat from top and sides with a very sharp knife. Starting from
one end, cut the beef diagonally into thin slices and place them lined up in the center of a large
stainless steel baking pan. Surround the beef with the cabbage and onion mixture and add a cup
of broth over the contents. Cover the pan with aluminum foil and place it in the oven. Bake
for 5 minutes at 375 degrees. Remove pan from the oven. Serve hot.
