1. INSTRUCTIONS FOR THE USER


WARNING It is important that all the operations relative to installation and adjustment, be carried out by qualified personnel according to the standards in force. The specific instructions are described in the chapter reserved for the installer. The appliance is not to be cleaned with water jet. Keep this booklet in a safe place for any further consultation. For periodical checks and any repairs consult only an authorised technical service centre and ask for original spare parts. Failure to observe the above can compromise the safety of the appliance. The appliance is for specific professional use and must be used qualified personnel. This appliance is only for the use for which it was deviced, for cooking food only. 1.1 SETTING TO WORK Connect the supply by means of the switch placed upstream from the appliance. Operate the knobs rotating clockwise and set the desired temperature and position. Before inserting the food, heat the oven well in order to obtain more even cooking.

1.2 CLEANING Never clean with a water jet. For the first use of the appliance is recommended to clean the metal party of the oven with soap, and heat empty for about 2 hours increasing progressively to the maximum temperature in order to eliminate any odours of the internal insulation. Do not clean up the oven when is hot. Do not employ corrosive detergents or means that could damage in some way the surface of the appliance as, for example iron wool. Do not use products containing chlorine (sodium hydrochloride, hydrochlore acid) to clean. 1.3 TURNING OFF IN CASE OF BREAKDOWN In case of breakdown deactivate the switch placed upstream to the appliance. Consult a qualified technical service centre authorised by the manufacturer.

2. INSTALLATION AND SERVICE


2.1 INSTALLATION AND POSITIONING Read carefully the instructions in this manual as it contains important information regarding proper, efficient and safe installation and maintenance of the appliance. The installation must be carried out in the manufacturers instructions and local regulations. This installation manual must be used together with the installation drawing of the appliance. THE CONNECTION OF THE APPLIANCE TO THE ELECTRICAL SUPPLY MUST BE CARRIED OUT BY QUALIFIED PERSONEL ONLY.

The data plate is riveted on the front of the unit, on the lower part at right and contains all specifications necessary for the installation. Oven and door from stainless steel and isolated mitre a thick layer of glass wool with aluminium. Observe the technical data for installation and use. 2.2 TECHNICAL DATA They are stated in the technical characteristics chapter . 2.3 OVERALL DIMENSIONS Before positioning the appliance check the overall dimensions and the exact position of the connections. WARNING Remove the protective film from the external walls of the appliance, carefully in order to avoid glue residue from remaining. If there remains some, this removes it with a suitable solvent. 2.4 POSITIONING The appliance must be positioned in order to allow the electrical connection and maintenance. We advice you to put the unit under a hood to guaranty a quick aspiration of the fumes. The appliance may be installed alone or in group with other appliances. In each case a minimum distance of 20cm has to be kept from inflammable walls. The appliance must be installed in horizontal position, which can be obtained by regulating the 4 adjustable feet. 2.5 ELECTRICAL CONNECTION The connection to the electrical supply network must be done according to the standards in force. Before caring out the connection make sure that the voltage frequency and power correspond to that state on the data plate placed on the appliance. Upstream from the appliance place an omnipolar switch that is easily accessible after the installation, whose contacts have a minimum opening distance of 3mm, sized for the charge and corresponding to the standards in force. This switch must disconnect the appliance completely from the electrical supply network. The yellow/green ground conductor must be interrupted by the switch. The supply voltage when the appliance is in operation must not differ from the nominal voltage value by +/- 10%. The appliance must be connected to the ground line of the network. 2,6 SAFETY DEVICES The appliance is equipped with thermostat for the ovens. The components that need ordinary maintenance are accessible by removing the control panel. Subject the appliance (at least once per year) to a total check by a specialised technician.

2.7 MAINTENANCE Switch of the appliance if it is damaged or malfunctioning, contact authorised service personnel using original spare parts for service of the appliance. Whenever it is possible the appliance should be disconnected from the electrical supply network before starting the service work. If the appliance according to the installation instructions is fitted with a main switch, it is done by turning the main switch in the O position. If not the circuit breakers (fuses) of the appliance must be detached. The components which need ordinary maintenance are accessible by removing control panel. At least once per year check the appliance by a specialised technician. IF THE ABOVE INSTRUCTIONS ARE NEGLECTED THE SAFETY OF THE APPLIANCE AND THE SERVICE WORK MAY BE JEOPARDIZED.

Recommendations for the use of high-pressure cleaners in cleaning heavy-duty kitchen appliances
These recommendations are valid either for movable high-pressure cleaners or for fixed equipment used to clean appliances at high speed by means of water and/or steam spray hoses as well as with the help of deter-gents. Do not clean heavy-duty kitchen appliances with high-pressure equipment or water jets. Cleaning heavy-duty kitchen appliances connected to a power supply network with water jets is not allowed. This is especially valid for electrically heated equipment or those with an electrical connection. The current European regulations for heavy-duty kitchen appliances clearly state: Equipment which is not built waterproof meaning protected against water dripping, water jets or water hosing may not be cleaned with water jets such as water hoses and high-pressure cleaning equipment. Why? For a thorough cleaning at high pressure (and also for the subsequent disinfection) some methods are employed that produce high-pressure and pulverise detergents. The cleaning is accomplished through mechanical elements (water finely distributed at high speed), chemical agents (detergents, aggressive and abrasive) and heat (temperature). Often with the use some damages appear because the water jet enters in every opening. But, also through water jet cleaning (usage of water hose) depending on the water pressure level, a big quantity of water at high speed is sprayed on the equipment. If presently heavy-duty kitchen appliances are cleaned this way, water enters into the housing through the junctions and dampens the electrical parts as well. Liquid detergents are electrical conductors consequently forming a ground contact. This is a danger for users who usually are standing on wet or humid floors. Also, in this way the functional security of the equipment is undermined. The differential switch, if present, is activated. Notes: Even the total turn-off of the equipment does not exclude this dangerous situation since the electrical connection to the terminal board can generate tension. In addition, due to humidity infiltration, malfunctioning when turning on the equipment may occur. It is also possible to differentiate and to allow spraying inside the pan of a kettle or a tilting brat-pan. Experience has shown that not only these parts are cleaned like that, but also the covering panels, the installation sites, combustion chambers and others. Damages due to corrosion If the cleaning detergents infiltrate in the inner parts of the equipment, rusting occurs on the pipework, installation elements, heating elements and gas fittings. Why do we not build waterproof equipment? Heavy-duty kitchen appliances cannot be built waterproof, but are protected against water jets (IPX4) and water hosing (IPX5) due to the following reasons: With heavy-duty kitchen appliances, the different cooking processes are performed in steady conditions at temperatures which reach i.e. 100 C for boiling pans, 110 C for steam ovens, 250 C for convection ovens,300 C for baking ovens. In the compact housings beside the cooking cabinets, there are safety and control regulation devices, which present a limited temperature stability. To avoid troubles and to guarantee long life to the equipment, these elements have to be ventilated even if they are well insulated. For gas-fired equipment there must be a sufficient quantity of primary air for combustion. For this reason the ventilation holes and other openings are necessary. These are usually located in such a way that with normal cleaning, water cannot infiltrate. These openings cannot be protected from the spraying nozzle of high-pressure water equipment or water hose, which allows to reach every corner and hidden angle. Cleaning recommendations It is recommended to observe the cleaning procedures described in the relevant instructions for use and maintenance which are delivered together with the equipment. In general it is to observe: - Loose pieces too dirty such as baking grates, grids, oil sieves, removable rack cassettes need to be cleaned out of the appliances in a cleaning booth furnished with covering or paving tiles. - The floor which is directly in front, near or behind the appliance is to be cleaned in a traditional way which means without water hose or high-pressure equipment. The user must responsibly observe these recommendations in accordance with the current European regulations.
